Yes I thought it was interesting that apart from dessert there were bot many overly decorative touches . The dishes looked good because they looked like good ingredients immaculately cooked. Fewer tweezered micro flowers and blobs of colour

@@CrowsofAcheronnot really . Over the top luxury and exclusive maybe . Pretentious suggests pretending to more than what is actually there. But if you look at the dishes, they are for that level quite simply presented and rely on the quality of ingredients and cooking . Some of the wines on this tasting are widely considered to be at the pinnacle of the craft . It sounds odd because the cost of the pairing was high but I think it represented value for money . if you wanted to try those wines any other way you’d end up spending a huge amount of money . Pretentious would have been to serve lesser wines and make a big fuss of it . This place just wants to serve the best

This and the Plenitude episodes were my favourites. Le Gabriel and Plenitude had some similarities, both being traditional 3 star restaurants in Paris. I also liked the Core by Clare Smyth ("most affordable 3 star") and the Enoteca Pinchiorri episodes. Alchemist was too out there for me. I also liked watching the episodes were very expensive experiences are fall short, such as the Venice Simplon Orient Express episode and the Sketch episode.

Service is such a huge amount of the restaurant experience. Food can be fantastic and you can still have a terrible night if the service is bad. On the other hand, with the right server, the food doesn't matter so much, because the night is great as a result of their facilitating it.

Apparently, officially, the Michelin guide doesn't actually consider the service in the rating, only the food. That's why you can have some street food venues with a Michelin star. However I'm not sure if that's the reality in practice

Wolfgang Puck did an interview where he spoke about the difference between two and three star restaurants. He essentially said that while a two star restaurant might have phenomenal food and service, in a three star restaurant, everything has been considered. From how you approach the entrance, the cutlery, how the dishes are presented, everything.

Great point about those small details. (Speaking of which -- Alexander took time, to comment on how much effort and attention, he thought had gone into the warm towels.) I've seen the "bread crumb sweeper" a time or two in restaurants -- but never the "napkin tongs." I can't help but wonder -- is the 'plan' to offer guests a clean napkin, partway through the meal? Or do the tongs only come out, when a guest requests a clean napkin?

@@phillipbarlow9387 The bread crumb sweeper is standard in every hi-end or michellen restaurant which "sport" tablecloth.Alternatively,the waiter will use a triangural folded cloth napkin "driven" by a pair of forks to sweep the bread crumbs on a bb plate.As far as the napkins tongs, i have never used it.Instead i used a pair of silver dinner spoons to change the old napkin with a fresh one whenever the customer left his seat e.g. for the rest room of the customer napkin was becoming stained...

Hi Alex! Thanks again for the Q&A. Please see below for my questions: 1. Why do some Michelin-starred restaurants only cater to parties of two or more? I'm a solo diner, it’s frustrating that I have to travel to places like Florence or Antwerp just to experience dining at a 3-star Michelin restaurant. 2. I’ve noticed that sommeliers often wear a grape pin to indicate their expertise during a service. Are these pins only awarded after reaching a certain level of certification? 3. What are the tell-tale signs that a Michelin inspector is present during a service? and how do restaurants behave when they are identified? 4. Are additional supplementary dishes considered in a restaurant’s Michelin review?

I want to come 😀 (and I know the perfect restaurant to go to in The Netherlands). Lovely to see the chef worked in the Dutch Restaurant Savelberg - Vreugd en Rust is the name of the building and park in which the restaurant is located, in Voorburg. I worked in the same restaurant with Chef Savelberg in 2008, while the restaurant had 1 Michelin star and before the chef left the country to open a restaurant in Bangkok. I see some things he picked up from his time with Savelberg in his cooking, and I see similarities in the service as well. An amazing restaurant and great video again Alexander, thanks for bringing us along during your visit!
