Honestly if I had to choose between a happy staff that makes a few mistakes or a miserable staff that gives perfect service, I'll choose the happy staff every time. Seeing someone have a good time makes my overall experience much more enjoyable.

Having been to 3 Michelin star restaurants over 10 years ( I have a wallet smaller than my belly ) ranging from 3* Alain Ducasse to 2* in Stockholm that looked like a pub to a 1 * English country house that did 18 courses I would have to say that this one fails not due to the service but due to having no veg ! At first these seems odd for a meat courses meal, but it needs a compliment, because the veg can increase the taste of the meat and put it into context. You can also be very clever with it. At the English country house they served rabbit and carrot, which told a story and rounded off the dish. Here they had the opera singer but forgot the orchestra. Though they did have a DJ to make up. Style over substance?

@@zakelweThe whole concept reads like a gimmick to attract a specific "vegetables are disgusting I only eat MEAT like a MAN" kind of clientele. Of course those types are also the type to snub fine dining so I'm not really sure who the chef is aiming for...

This is how to do casual fine dining. I want to eat everything, your production is amazing. I don’t care if they make mistakes. I’m a patient person. I’ve been to stuffy places they don’t make mistakes. I’d much rather be around the relaxed happier people. (Guy Savoy had both, but Robuchon had a disconnected vibe like military people dancing ballet. Good show but not warm.) Krug should seriously consider you as a brand ambassador or for a sponsorship for your videos. I’d love watching you sample each of their products and talk more about them. The way you talk about it makes me want to try it, but also that I could appreciate it more when I do.

Excellent video. We ate there last year and whilst it is good, so many courses becomes a trial and if you don't like noise in a restaurant, this is not for you. Great experience but too many downsides for us to return.

I love the small mistakes, as long as they don't take away from the experience, like if it persists like laziness or so. Would absolutely like to try this place, the prices are not crazy, maybe for the rooms but they look top notch, so i guess it can be justified that one night. But it also shows CLEARLY in your review that it is not for everybody and that's okay and exactly why I love these reviews! Too bad they didn't have a bit deeper wine cellar with all that juicy meaty-selection there, but the Valbuena was a nice touch!

I like the attitude of the chef just does his thing and doesn't care about any social media videos or anything like that. I like that he sticks to what he thinks is good like a meat focused menu and is not trying to push any agenda down your neck whilst eating like that alchemist place does. .

Was so excited when Wales got its first 2 star restaurant but unfortunately it's still a four hour drive from South Wales! It's pretty damn pricey as well - I believe their menu is possibly the most expensive in the UK? Including the Fat Duck, which is one of the most famous tasting menus in the world...... L'Enclume for £150 less per head seems a better proposition. Or Core by Clare Smyth and the difference will pay for the hotel to stay in London.....
