I'm Peruvian and for me the "aderezo" is the most important part, you can fry with some butter + oil the sea meat and then remove that and save it. In the same pan add on the hot oil (with the sea food flavor), the onions cut previously in tiny squares, fried it in medium low temperature, add garlic pure, fry very well, like 20 min, add salt, pepper, add ají colorado or tomatoes + red velvet powder move and fry very well, add ají amarillo after 5 min, fry all together, the aderezo needs to look like a pure with the oil coming through (my English is not good, I'm hope I'm using correctly the words), then add some water, vegetables in squares (corn green peas, carrots, cilantro, parsley, add sea food meat, cook for 10 minutes together and then add this sauce to the rice and fry it together ( not more oil needed), ready!. It's my personal recipe, so may be a little different than others, because I learn to cook here in USA by myself (I got married) and I missed so much Peruvian food that I had to learn, watching videos, reading recipes, etc until I found the flavor I like 😊
