Hey brother, just some advice- you can scoop a bit of the heating gels out of the can and on to those little bowls that you had. Using a smaller amount will get you a stronger heat because the heat starts to get stronger once it really starts to engulf the gel. Hope this helps you in the future with other cookouts in your truck!

Love the vids bro. I like my steak rare/med as well. I know cooking in a truck on a rock limits you, but what I find works best is you make the rock extremely hot (to when you dont want to touch to check) and lay the steak on there. It sizzles instantly and starts to give a char to the steak. 1 Minute each side for a steak that thin should be fine.

You can cook alot of different Japanese or Korean food on there. You can cook onions, mushrooms, asparagus, bean sprouts, thin slice pork belly, chuck eye steak, pork neck, boneless chicken thighs, and thin slice lamb shoulder. Get some kitchen scissors and you can cut the meat up. If you look up "Yakiniku" you can get some ideas from how the Japanese do it.
