I think the rear deck swamping at higher speed is due to incorrect transom angle. The typical transom pitches to the rear at a 16 degree angle. This angle creates lift when force is applied. This lift is what makes a conventional boat plane out. You don't need more elevation at the motor. Lifting the motor up will alter your center of gravity and make your vessel top heavy. "Google" transom angle to see an illustration of this principal. Don't give up, your kayak was floating fine until you applied more throttle. Review the video and you'll see the same thing. Every time throttle was increased the rear deck was pushed downward causing it to flood. The correct transom angle will actually lift the rear of the boat up reducing draft. Keep trying, but that's the first thing I'd do to correct the problem.

I have a F&S Eagle Run 12, with a similar storage area in the back but with a little more boat behind it. I 've added a rudder on the back and thinking about putting the Hangkai 4hp jet drive in the storage area. Doing the rudder I had to verify that my kayak is plastic #4 and I melted more to it. So for the motor I would create a thru hole and weld it back shut to let it swing up and down. Good luck out there on the water dude!

Let's try and push a displacement hull faster than hull speed with it out of trim. What's the worst that could happen? It sunk? Who would have thought?? Bro, FYI when you push a displacement hull faster than hull speed it sinks down in the water. Zoffinger used a flat bottom boat. It can in theory plane when you push it fast enough. Good first try though!

It was a good first attempt. I laughed my ass off that you went all-in on your maiden voyage (I’m thinking you probably could have waited to bring the fish finder until you knew that it wouldn’t sink. I’d bet you didn’t even think about fish for one second during any part of that). In addition to the transom angle as that other fellow mentioned you appear to have a major mechanical attachment problem. The motor needs to be mounted better as it looks like the weight hanging off is causing the bolts to nearly punch through the shell (is that where the water was entering the kayak, or did it cause the upper shell to separate from the bottom hull?) How about longer rails that tie into the shell farther forward to provide some mechanical strain relief to the fasteners? Otherwise, kudos for even trying 😂👍
