Spot on. For years I made a three egg sponge but two is better as you get a better ratio with the filling. Stork not butter definitely better. And Delia also right about warm water not milk - it makes an airier cake. My own tip - keep the oven temp lower than noted in book. It gives a lovely even rise and the cake won’t dome.

I like how she explains the whys and whats; why use a big bowl, why use water instead milk, what is a dropping consistency, why grease a non-stick pan, why use silicone versus grease paper...

@lemueltay It's a Morphy Richards hand held mixer, 120watts. She uses a Braun Multimix in the How To Cook series, and in the latest one (Delia Through The Decades) she uses a Kenwood 250 watt whisk. She doesn't usually have continuity with her appliances she uses on her programmes.

I don't think she said how long it's supposed to be in for. But on her website the same recipe says: "Place them on the centre shelf of a pre-heated oven gas mark 3, 325°F (170°C) and bake for 30-35 minutes. Don't open the oven door until 30 minutes have elapsed."

In those days, circa the 1970s, not very many people at all. In this day and age, most people have one - they have become more and more popular as the years go by and more and more cheaper in price

I find I don't need baking powder, all in one just mixed very well, no soapy taste.

@TheRenaissanceman65 Both Delia and Mary Berry say to add baking powder. It is necessary in an all-in-one because it’s all beaten so as Delia says “You need more rising power”. In a cream-in method the flour would be folded in delicately, trapping in a lot of air. The taste difference is negligible. In fact I would say impossible to identify.

The fashion in the late 70s and early 80s was horrible. Green and red? XD I love Delia though.
