Oh my, I'm in love. This is adorable! I love spiders and my sister had a pig plush with little babies in the tummy that is a special memory for me as well. I just made a baby spider! I had to use buttons because I didn't have safety eyes, and in the end I messed it up so I just did whatever to close it. It ended up coming out really good for a first try! I'm going to try and make a spider hat using the pattern of this spider plush!

Why do I run out of stitches at the round with the legs? If I go to the 2nd set of legs I run out and don't have enough spaces

What size hook?

It depends on the yarn you want to use for the spider. Yarn skeins usually have the hook size best suited for the yarn on it but for things like this you'd probably want to use 1 or 2 hook sizes smaller than what the yarn calls for to keep the stuffing from popping out between stitches.
