If you wrap your portioned meat tightly in plastic wrap, then wrap with foil...then place in freezer bags you will have zero ice on your frozen meat or freezer burn. Doing this I have had ground beef for 10 months in the freezer that looked, smelled and tasted like newly frozen meat. Works for chicken too. Loved the baking soda tip. I will try it for sure!

Cooked mushrooms freeze REALLY well! Whenever I bag some bargain mushrooms, I always slice, fry and freeze them while they're still really fresh rather than find them sad and slimy after a week. Sliced gives me more options to toss them into a pasta or other dish and it's quicker with less work. 100% on adding them to mince - it's brilliant on many levels. I just chop up my frozen mushies much finer before adding them into the mince - and they're so easy to chop when frozen. That baking soda hack is intriguing and a must try! Cheers from Oz!

I don't waste foil, so I drain it in a glass bowl. Then, once it is cool and solid, I just clean it into the trash. Everythig else I've been doing since I became a father. I like functional processes and this video is full of them. Thank you.

Most steaks you buy in grocery store were frozen during shipping. Years ago I worked in meat packing plant and all beef is frozen before shipping. Flash frozen though is blast freezer. This freezing may completely freeze or partially freeze it. So you are technically refreezing when you get it home. If you buy a side of beef it only be frozen once and much better quality.

The way you do portions is very helpful. I did it that way for years, however, the last five or six years, I started getting kitchen paper wax's, cutting the wax's into quarters with a pair of kitchen shears, making patties, and placing the wax squares between and the outside of stacks in the plastic bags. It makes it easier to get the portions out.

Nicole: I really like the tip for individual burger-sized portions using only one freezer bag. Love the potato masher technique for ground meat. Brilliant! Thanks so much for the tips. Living alone, I'm always making food in batches, then freezing at least half for meals later in the month. I do this for pinto beans (home made refried beans), garbanzo beans (hummus and salads), pasta sauce, and other freezable foods as well. Haven't tried batch cooking rice yet (fried rice and soup). That's next. More food tips, please!!! 🙏🏻

😂 This reminded me of cooking with my late Mamaw. She’d tell me to brown meat for something, and I’d tell her it was done and she’d say, “you didn’t brown it, you grayed it” 😂 Also, if a direction on a package said “shake well” I’d shake it and she’d say, “it says shake well, not half a*s” Which leads me to Mamaw’s best advice: “anything worth doing is worth doing well.” 😊

Loved this video….I learned a couple hacks I didn’t know. I especially loved the fork method! I generally only cook about a pound of ground beef at a time so I use the paper towel method. However the biggest new thing I learned is the mushroom hack for stretching. My hubby and I don’t care for mushrooms but most of the rest of my family does. When cooking for the whole family again I’m going to use this genius idea! I’m sure they will appreciate the addition of mushrooms and as much as I don’t care for the texture of them, there is something about the flavor that they bring to dishes.

When thawing a steak and really ANY meat you thaw it in your refrigerator. It takes a full day if your not thawing say a pot roast that may take 3 days but it makes a MASSIVE difference texture AND flavor of the meat

For things like taco filling, sloppy joes, hamburger casseroles, I'll often split 1lb of ground round into halves. You can add chopped onion, chunky salsa, rotel etc to each half to bulk it up.

My burger hack is takeout prevention! I like to fry up 5 or 6 lbs with onion and freeze it flat in 1 lb portions. I have a short list of quick meal ideas for the precooked burger. On those nights I forgot to take something out, or the meal plan fails, I can still have dinner ready in 20 minutes.

For years I used a flat wooden spatula to break up ground beef in the skillet. But several years ago I discovered a gadget that works way better, and is way easier, a long handled plastic/nylon utensil with a kind of plus sign bottom that makes it so easy to crumble and brown meat and not damage a nonstick surface. Much better than a potato masher which I have tried.

You can “stretch” ground beef by using tofu by using the potatoes masher to mince it up while it’s cooking with the hamburger. It’s easier than the mushrooms because you don’t need to wash or cut it up beforehand like you need to with the mushrooms. I can’t tell tofu is in it! You can easily do half and half ratios.

I'll have to try the foil trick. Usually I put my colander over a large bowl or plate and then let the grease sit there for a while until it's solidifies or I just take it over to the trash and throw it away after a while but then it has still has that smell for a while. So next time I cook ground beef I will try the foil trick

Great ideas! I would go one further and say that if the standard seasoning for recipes includes salt and pepper, onion and garlic, add that when the meat is cooking. Saves time later on.

I like that baking soda hack. If you spread out your ground beef into small chunks on a foil or parchment lined baking sheet and bake it on 350 for 20 minutes or so (breaking it up as it browns on the bottom) you will end up with ground beef with burnt bits throughout ready for any sauce to make what you want.

If you have to break it up occasionaly, where's the advantage over just frying it normally? Slower (20 min) and same amount of work (occasional breaking up). Just don't see how this helps.

One thing. When putting the meat in freezer ziplock bags, after mashing it flat, close the zip lock so only a little 1/2 inch portion is unzipped. Then while laying the bag flat on the counter, work the air out of the bag with one hand, and zip it closed with the other. It gets the max amount of air out.
