I don’t have a cast-iron skillet that will fit in my oven, it is a really huge cast-iron skillet! Can I use another kind of pan or possibly a cookie sheet? Love your recipes Nicole you’re my favorite!

I worked for Pizza Rut back when the Taco Pizza was hot and Pan Pizza came out. We made large batches in a Hobart so the dough did get some working but I wouldn't call it kneading. Divvied the dough up into pan-sized portions, shaped it and placed it in pre-oiled (lots of oil, you're frying the crust) carbon-steel pans and refrigerated those overnight. Making it just consisted of lightly punching down the center and topping it off. I just retired so I'm looking forward to perfecting Pan Pizza AND figuring out the refried-bean sauce to make Taco Pizza.

I sprinkle coarse ground cornmeal into the oil before putting the dough in. Comes out just like the pizzeria.

Frying the dough in cast iron and taking cheese to the edge makes this more like Detroit style than pan style. Dei Fratelli makes a good pizza sauce. I use that and you can adjust seasoning if you want. Saves you from using a watery can of crushed tomatoes. Also, just weigh your flour. It's foolproof. Takes the guesswork out and the crust is always consistent. Whole milk gives better flavor than part skim. Glad that you shredded your own cheese.

You are a beautiful person inside and out. I’m 83 and recently lost my wife. I’m a none kitchen person who is learning to cook. I’m lazy always looking for the easy way. Can this dough be put together in my bread machine? My wife a great cook wouldn’t use these new appliances when I bought them for her but I’m going to use them. I miss her.

Not a fan of thick crust pizza, but making your own is very easy. I use no-stick cake pans and spread the dough thin -- and make several flavors.

if you use a cake pan instead of 12" round cast iron(same volume) you can use a cast iron griddle as your "pizza stone". Either way you can do 550f ~12 mins no probs.

Great recipe looks great but I would not use Olive Oil for baking, I would use Grapeseed Oil or Avocado Oil because of the higher smoke point for a high heat cook

Do KZbin cooks have an aversion to rotary cheese graters, or do they prefer hand grating on a box grater? I bought a rotary grater on Amazon for about $26 and never have to hand grate. It takes a fraction of the time, and they are really easy to wash in a little warm soapy water.

I add heat the oil and 2 tablespoons of honey / mix. / and then put that on into pan and baste the top of the dough prior to sauce .

Aldi had a pizza stone just like that last week for $10. I make cast iron pan pizzas all the time. I just make the dough and let it rise in the pan. I can’t duplicate the sausage from the hut though, any ideas?

I'll usually shred it if that's what the recipe asks for, but the handwringing about pre-shredded cheese not melting is fairly overblown. Especially if you're cooking it in an oven at that temp for that long. I think it's just one of those cliches that cooks and food influencers like to cite, like "Pasta water should taste like the ocean" and "You want to be able to control the amount of salt in your meal; don't use salted butter" (tangent: I always wonder how these last two don't conflict with each other).
