Aloo Beans Sabji Recipe

Ingredients:
For beans aur aloo ki sabzi:
Potatoes peeled 4 pcs
Oil 1 tbsp
Jeera 1 tsp
Dry red chilli 2 pcs
Garlic chopped 1 tbsp
Hing 1 tsp
Salt 1 tsp
Turmeric powder 1 tsp
French beans 1 cup
Coriander powder 1 tsp
Jeera powder 1 tsp
Garam masala ½ tsp
Red chilli powder ½ tsp
Water splash
Coriander chopped 1 tbsp
For hare mirch ka paratha
Wheat flour dough
Ghee
Red chilli powder
Ajwain
Green chilli chopped
Method:
Bean and Potato Sabzi Recipe:
To begin preparing the beans and potato sabzi, start by washing and cleaning the potatoes. Peel them and cut them into large dice.
Next, heat a pan over medium heat and add oil. Once the oil is heated, add jeera (cumin seeds) and dry red chilli. Allow them to splutter, releasing their aromatic flavours.
Afterward, add chopped garlic and a pinch of hing (asafoetida). Sauté until the garlic turns light golden brown, infusing the oil with its delicious essence.
Now, it's time to add the diced potatoes to the pan. Mix them well with the tempered oil and spices. Allow the potatoes to cook over medium-low heat for about 5-6 minutes.
Cover the pan with a lid to expedite the cooking process of the potatoes. This step helps in retaining moisture and cooking the potatoes evenly.
Once the potatoes are about 60% cooked, introduce the French beans into the pan. Mix them gently with the partially cooked potatoes.
Add coriander powder, jeera powder (cumin powder), garam masala, and red chilli powder to the mixture. Stir well to ensure the spices coat the vegetables evenly.
After sautéing the spices for a minute, sprinkle some water over the vegetables. Cover the pan again with a lid and let the sabzi simmer over low heat for another 4-5 minutes.
Once the French beans are cooked to your desired tenderness, add chopped coriander for a fresh burst of flavour. Mix well, and your delicious bean and potato sabzi is ready to be served.
Green Chili Paratha Recipe:
For the green chilli paratha, start by making a dough using wheat flour, salt, water, and oil. Knead the ingredients together until you achieve a smooth and pliable dough consistency.
Take a portion of the dough and roll it into a flat circle. Brush one side with oil and sprinkle ajwain (carom seeds), salt, red chilli powder, and chopped green chilies evenly over the surface.
Fold the dough into pleats and then shape it into a round ball again. Dust some flour over it and roll it out into a thick paratha.
Heat a flat pan over medium heat and place the paratha on it. Cook it from both sides until golden brown spots appear.
Finally, add ghee to the paratha and roast it until it turns light golden in colour.
Serve the bean and potato sabzi along with the freshly prepared green chilli paratha, and relish the delightful flavours of this nutritious meal.
