ALOO GOSHT
INGREDIENTS:
1” ginger
7-8 cloves of garlic roughly chopped
4 medium onions roughly chopped
5-6 tbsp of oil
2 bay leaves
1” cinnamon
2 star anise
5 green cardamom
1 mace
5 cloves
10 peppercorns
1 kg Mutton
2 potatoes mashed
1 litre water
1/2 tsp of Turmeric powder
2 tbsp of red chilli powder
1 tsp of cumin seeds powder
1 tbsp of coriander seeds powder
Salt to taste
3 boiled potatoes cut into halves
1 tsp of garam masala powder
5 slit green chillies
2 tbsp of freshly chopped coriander leaves
METHOD:
Grind 1” ginger
With 7-8 cloves of garlic roughly chopped
And 4 medium onions roughly chopped
Grind it into a fine paste with less to no water
Heat a kadhai,
Heat 5-6 tbsp of oil
Reduce the flame, add whole spices:
2 bay leaves
1” cinnamon
2 star anise
5 green cardamom
1 mace
5 cloves
10 peppercorns
Add the ground onion after the whole spices release an aroma, increase the flame,
Fry till the onion paste turns brown in colour
Add 1 kg Mutton and sear it on a high flame for 5-6 minutes
Add 2 potatoes mashed
Sauté the mutton for 1-2 minutes
Add 1 litre water
Add 1/2 tsp of Turmeric powder
2 tbsp of red chilli powder
1 tsp of cumin seeds powder
1 tbsp of coriander seeds powder
Salt to taste
Give it a stir, cover and cook it till mutton is 3/4 cooked
Cover and cook it on a medium-low flame till meat is 70% done
Add 3 boiled potatoes cut into halves
Add 1 tsp of garam masala powder
Add 5 slit green chillies
Add 2 tbsp of freshly chopped coriander leaves
Mix it well
Cover and cook it for another 10-15 minutes or till the mutton is done
Remove in a serving bowl
