Wow loved your video on Aloo Bun. I had been missing these buns from Iyengar bakery and here I found your video. I am going to try this out and am sure it is going to come out well.

You can use 50:50 maida atta. Whole atta will yield little sense buns.

I used the same quantity to make the dough but was very sticky. What to do then?

The dough will come together after kneading. Even after kneading well if it’s sticky, you can add a few teaspoon of flour.

You can steam the buns instead. It will be similar to Asian bao.

Why do the buns crack during baking? Not on top - sometimes in the sides.

It happens due to lack of moisture. Do not add too much flour while kneading.

My buns get stuck to parchment paper... How to avoid that?

Hope you are using parchment paper and not butter paper. Both are different things.
