why can't we just use bioremediation for scfa to find the enzymes and use whatever that tool is to find the genes and target that gene to the cells of the gut

Short chain fatty acids involved in gut health are butyric acid (butyrate) and proprionic acid (proprionate). You can buy sodium butyrate as a supplement (in the US); I don't know if there is any evidence of benefits from sodium butyrate supplements in humans. The best way to have more short chain fatty acids in your gut is to eat a diet that is rich in fiber - particularly resistant starch - and have your gut bacteria make them for you.
