My girlfriend is trying to get me to get rid off my cast iron Dutch oven, I gotta make her something really good yet somewhat simple recipe in there. Anyone here have any recommendations? Thanks y'all!

Try this. Of course you'll want to scale down for two. This recipe is easy to prepare and pack for a FAST end of the trip dinner. Even my friends who dislike Brussels love them in this recipe. Simply prepare all ingredients and drop in the Dutch oven. Grab some latex gloves and mix all items with the oil BEFORE placing on heat. Gloves make for fast-easy cleanup and saves water. SSOPP-BS SMOKED SAUSAGE, ONION, PEPPER, POTATOES & BRUSSEL SPROUTS SERVES 8 Hungry Rafters ONE 11” SQ DUTCH OVEN 400F OVER CHARCOAL OR STOVETOP OVEN-1 HOUR / STOVETOP-30 MINUTES Ingredients • 3/4lb bacon bits and ends, rough diced • 3lb smoked sausage, sliced 1/4” thick (mix it up with Brats, smoked sausage, etc) • 3 large sweet yellow onion, diced • 3 large Pablano Peppers, seeded and 1" diced • 3lb baby yellow and/or red potatoes, quartered • 2lb brussels sprouts, quartered • 3T extra virgin olive oil • 3/4t kosher salt • 1T ground thyme • 3T smoked paprika • 1T black pepper • 1T red pepper flakes 1. Place all ingredients into your Dutch Oven and mix. Use latex type gloves for less hand mess 2. Cooking Methods a) Charcoal: use enough coals for a 400F oven setup. Place on heat bake 15 minutes, stir gently, cover and remove bottom heat. Cook for about 45 minutes. Stir before serving. b) Stovetop: cook for 30 minutes over med-high heat with lid. Stir every 8-10 minutes. Turn to medium-low heat for last ten minutes. 3. REMOVE from heat. 4. Fold in lemon drizzle mix (see below). 5. Rest for 10-15 minutes with lid on before serving Lemon Drizzle Mix: [The lemon mixture melds into a beautiful sauce with a refreshing tanginess and savory flavor] • 2 Lemon squeezed, about 6-8T juice • 2 grated lemon zest • 1 bunch fresh chopped parsley or 4T dried • 1C grated parmesan cheese Notes Serve with a nice Louisiana hot sauce for individual added heat; like Crystal Hot Sauce. Great end of trip meal. You can add hardy leftover veggies like carrots, celery or other vegetables. Enjoy!

We just completed a 5 day canoe trip on Yellowstone Lake last week. We, for the first time, brought an aluminum Dutch oven. I loved it, we cooked soup in it and made biscuits. We had no problem baking using coals out of the fire pit, we brought no charcoal. It will always be part of my canoe trips from now on.

I absolutely love anodized aluminum Dutch ovens. So durable and non stick.

Great tip on charcoal vs wood. I've figured out for camping briquettes work best for aluminum and for grilling. I love wood charcoal but it just doesn't give the best heat for grilling or the Dutch oven. And using fire coals on the aluminum Dutch oven isn't ideal. Thanks for confirming this anecdote.

I would still use cast just because of the health effects cooking with aluminum cookware can cause.

Cast iron=better forever, aluminum= better while it has a coating (2years) ill not get aluminum poisoning
