Over the course of 2 months of editing, I realized a lot of the video games, anime, movies, and soundtracks I listened to during that time started to influence my video style, especially in the music selection. Can’t remember the amount of times I fell asleep in my chair while searching for the right track, but it was a lot, haha. A few of inspirations: Your Lie in April, Xenoblade Chronicles, RL Grime, The Bear, Chef (Jon Favreau), Lofi Girl, and Ocean’s Eleven. Sometimes I’d finish editing for the night, start playing video games, then immediately rush back to editing because of a boss fight, a cutscene, or a musical theme that inspired me to change up a particular song for a scene. sounds kinda weird, but man I love video games and anime

Your editing was professional. However, I was even more impressed with your journalism. Your interview with Alvin and the gang and the amount of time you spent interviewing and filming the crew for the entire week showing us the very details of their day be day operations. Normally journalists are in and out in a day or so. The quality of the production of this video shows how passionate you are about getting the story out in your specific style and with that said you probably have a long career in front of you in this field.

It’s fairly common at the “institutions” of TX bbq. People come from all over to work and learn the craft with the goal of going out on their own. Muellers, Franklins, Killens, P Lodge, Truth, Goldees, etc etc… many of them worked or learned from the others. I talked to a kid who was unloading wood at Terry Blacks. Originally from South Carolina, him and his brother moved to TX to learn, work for a few years, and go home and start a TX bbq joint in the middle of the Carolina’s..

I'm from Texas, spent over 23 years in the restaurant business, and that is honestly probably one of the best, truest, behind the scenes look at a restaurant I've ever seen, short of being there. I hope this lets people realize the kind of work and dedication that goes into owning and running not just a bbq place, but a restaurant in general. You live and breath it. If you think of getting into the restaurant biz to just make a buck, to start one and then sell it for a bundle, because it's an easy way to make money.... DON'T!!!! you will fail. It's a way of life, not just a "job" or an investment. Fantastic video. Fantastic BBQ.

In September 2022 hurricane Ian hit my town (Fort Myers, FL) and we evacuated to my aunts house a cpl hrs away. While we were there me n my Dad came across this documentary and we both really loved the story. My dad loves good bbq restaurants and has traveled to a lot of different ones all over our state . The next month October 2022 while our town was rebuilding, i got a new job with a $3000 sign-on bonus. I told my mom for Xmas, as one of my dads gifts, I'm using that bonus money to fly me n my dad to Goldees bbq in March for his birthday. One month later on Nov 22, 2022 my father died unexpectedly. It crushed me. But I still took the trip in March 2023 to honor his memory n celebrate his birthday. I brought one of my best friends who my dad really liked in his place. We got there at 6am and we were number 9 n 10 in line. Best bbq I've ever had! It's painful to watch this video but it also reminds me of my friend who got to experience waiting in the cold for 5 hours for BBQ with me lol. This year, on the same day from last year, me and that same friend went to one of our local barbecue restaurants we like here and had lunch in his memory and in memory of the trip we took. I love n miss you Dad and I'm sorry you didn't get to experience the #1 BBQ in Texas. Thank you Goldees and Alvin for making this unforgettable documentary ❤️🙏🏻

After growing up on Anthony Bourdain, I have to say I'm very pleased that despite his passing, the ethos of food television, journalism, documentary.... whatever you want to call it, is headed in a similar direction to what he taught us it could. The people doing the cooking, the amount of attention, love, and force of will that chefs work with, every single day to make something that quickly disappears (literally) down inside of us; that is what it's all about. There's no greater way to appreciate food other than eating it yourself. Pretty great job for a debut film. Wholesome as hell. And please keep channeling the experience of watching a good anime crier when you arrange the soundtracks.

As a Londoner born and bred I can confidently say that good BBQ is not very available. I stumbled across this video and watched it with my wife. You are obviously brilliant at what you do and your success is due to the incredibly hard work that you put into everything you do. My father told me when I was a young man that there are two things you need to love in life , your partner and your work. We found it emotional when you said that you had all been friends since you were very young. You have created not only a look into your success in business, but you have given inspiring to anybody who watches, whatever their choice of career. I would love to come to Texas to shake your hands and taste your food. God bless you all, and may you continue to succeed. Kind regards, Les and Anne xxx

@@lesroberts3226 it’s funny that you say that. I have a friend that was stationed at Lakenheath AFB for 5 years. I went over twice and spent a total of two weeks there. Well it's cooling off a little now due to Fall. The State Fair has come n' gone, Cooler weather needs some good hearty hot meat to warm up your insides. Texas Barbecue (written: bbq). Who's bbq is the best in Texas? Ok, that's like asking someone, "who's the best Momma in Texas?" Somebody's gonna fight. You always gonna go with what you know, trust, and frequent. In my experience if the bbq joint is a Black owned, and Black operated bbq, you really do need to stop and try it out. Serious! You'll kick yourself in ya' butt if you don't. Brisket is king in Texas, yes. Ribs (both beef and pork) are the close second, & depending on where you're at in Texas also determines bbq preferences. Chicken, & Turkey legs, links, & sausages, Hell, I saw a sign on a joint close to Houston advertising: Try our NEW "Bbq fish filets." (crickets chirping), with "fresh" bbq bologna. Oh sweet Lord, no wonder Houston folks got that certain "glow" all over 'em (I'm from Dallas, we look normal). South Texas bbq has a more Tex-Mex selection; barbacoa, lengua, cabrito, and some are starting to sell Borrego Asadito (lamb). South Texas bbq's also serve the onion, and jalapeno peppers, only now they are grilled, and have a delicious sweet flavor. Then, here comes all the fancy stuff: many accoutremonts, deserts (i.e. bananna pudding), sauces (true, Texas bbq don't need no freaking' sauce, ya' damned yankees), sides, and Texas style sweet tea. People ask, why do Texas bbq's always serve sour dill pickles, yellow onion slices, and jalapeno peppers along with the bbq? It's Traditional. Your tounge, and taste buds get so overwhelmed by the richness, and smoked flavors that you need a little acidic bite to freshen your palate. Hope all those that have not yet visited Texas, will consider stopping at a bbq joint if they find themselves in The Lone Star State. Stay away from chain restaurants. Here, even the bad bbq, is good & filling, and makes ya' burp really satisfying. See ya'll soon!

I can't remember watching a more enjoyable story in my 69 years of living. The humility of a restaurant striving to please their cliental, the cooperation of a staff all working together to "dish-up" the best food ever to grace a human's palate this side of Heaven, just makes me want to hop in my car and drive to Kennedale! The shared camaraderie of the staff is amazing. It is like they all have the same goal in mind - to serve the best food in Texas. The music, the story-line, the video sections pieced together made me feel like I was a part of this family. To me, that is a way of life in Texas; we are family. We have our differences, squabbles, own opinions, but when it comes to Bar-B-Q or Bar-Be-Que or Barbeque, we all agree, TEXAS has the best. Great presentation! Heartwarming story! Undoubtedly some of the best food ever! Hope to make it there soon. I'll be in the white SRX camped out Thursday night at the front door.

There is more to running a restaurant than cooking. People do not realize that. Supplies, employees, business aspects, etc. Best restaurants are a good restauranteur plus a good cook. Clear off your schedule for the rest of the day cause you won’t wanna do anything. I’m a bbq snob and make pretty good bbq myself. With everything going on in this world, we all could learn something from this. I started watching this video because one I’m from Texas, two I love BBQ and three to brag about Texas to my coworkers but as I watched this I was in aw on how well y’all showed the world what hard work, friendships and believing in something is what matters. Great group of hard working Texans y’all are in my book the best because of who y’all are and how you represent Texas….

You know, at the beginning of the video they looked like what you might think would be just the typical hourly-paid hired help, the young people paid to man the service counters, not necessarily what you think of when you think of great small town Texas barbecue pitmasters. But it is the personal backstory starting at 11:04, of how they "all knew each other in elementary" that really makes you want to cheer for them. For a bunch of young life-long friends who have worked hard, taken a chance on themselves, and excelled together - now That's the story! Being ranked #1 in Texas by Texas Monthly, well that's just the rendered fat glazing on the brisket. Much continued success to this great group of young people - let's just hope newfound fame and fortune doesn't go to their heads and ruin their life-long friendships. (Also hope they all have an ownership stake - that's the American Dream for entrepreneurs! Risk much - Work hard - Enjoy the fruits of your labor.)

I love putting in the work the night before a BBQ at my home. Waking up at 1 am to get the fire started and the pit warmed up. To get the brisket on and smoking by 2 to 2:30 for an evening meal. Sitting in the heat of the sun tending the fire to get just the right color of smoke out of the stack. While everyone else is in the pool, or playing corn hole. Then when the ladies tell you they generally don't like brisket but you've seen them at the cutting board grabbing 2 or 3 more slices. Non commercialized BBQ is a labor of love.

These guys are all around my age, still hanging out and living life together after all these years, they look so genuinely happy. Meanwhile my friends from high school and college naturally grew apart as people moved, got married, etc. and now although I have a fantastic job in terms of financial security (control systems engineer), it's nowhere near as fulfilling as this appears to be. Relationships are the most crucial aspect of a happy life (backed up by multiple multi-decade experiments) so these guys are really living their best life. Can't say I wouldn't want to join them.
