Telangana Allam Mamidi Kaya Ginger Mango Pickle తెలంగాణ అల్లం వక్క అల్లం మామిడికాయ పచ్చడి పక్కా కొలతలతో
INGREDIENTS:

Mango pieces మామిడికాయ ముక్కలు - 1 kg
Red Chilli powder కారం - 120gms
Mustard powder ఆవపిండి - 50gms
Fenugreek powder మెంతి పొడి - 20gms
Salt ఉప్పు - 250gms or according to your taste
Additional Garlic వెల్లుల్లి విడిగా - 100gms
(For Ginger Garlic paste):

Ginger (Peeled) పొట్టు తీసిన అల్లం - 170gms
Garlic (Peeled) పొట్టు తీసిన వెల్లుల్లి - 170gms
For Tempering తాలింపు సామాను:

Sesame Oil / Peanut Oil నువ్వులు నూనె / పల్లి నూనె - 300 ml
Mustard seeds/Black seeds నల్ల గింజలు/వామటాలు - 1 TbSp
Coriander Seeds ధనియాలు - 1 TbSp
Cumin seeds జీలకర్ర - 1 TbSp
Turmeric powder పసుపు - 1/2 TbSp
Asafoetida ఇంగువ - 1 tsp
PREPARATION METHOD:

1. To make the Fenugreek powder:
Dry roast the Fenugreek seeds, cook them down completely and grind them to a fine powder
2. For Ginger Garlic paste:
Peel the Ginger & Garlic and grind them to a smooth paste
3. Wash the Mangoes and completely dry them off.
Cut the Mangoes through the Shell into yourdesired size pieces
Take off the Seeds & peel off the thin paper like skin
4. Measure everything using a Food Weighing Scale
5. Heat Oil and make Tempering. Let it cool down completely
6. Prepare the Pickle mix and as shown in the video (add Ginger Garlic paste, Red Chilli powder, Salt, Mustard powder and Fenugreek powder in to a bowl) Mix well
7. After the Tempering is all cooled down, pour in that too into the mix
8. Mix everything well. Now add the cut Mango pieces and mix well
9. Cover the bowl and keep it aside for 3 days
10. After 3 days, mix again. Give it a taste and add Salt if needed ( time more sour the Mangoes, the more Salt it would need)
Store the pickle in a dry glass jar. It will last for over an year
