Cooking With My Palestinian Baba!

Cooking with my Palestinian baba! Recipe is below!

CILANTRO CHICKEN
Ingredients for 1 whole chicken:
1 whole chicken
5-6 potatoes (depending on how many you want)
1 bunch of cilantro
5-6 garlic cloves
3-4 limes
1 piece of ginger (optional)
Granulated garlic
Black pepper
Salt
Curry powder
Olive oil
White vinegar
1. Set over to 375F. Chop garlic, cilantro and potatoes and set aside.
2. Clean the chicken with white vinegar and wash it really good. White vinegar helps get rid of the gamey chicken taste.
3. Marinate the chicken with lime. Stuff the lime inside the chicken, then follow with olive oil, fresh garlic, ginger, cilantro and all of your spices.
4. Place chicken on baking sheet. Place potatoes in the rest of the marinate and toss. Once the potatoes are coated really good, place them around the chicken and pour the rest of the marinate into the baking sheet.
5. Cook for 1 1/2 hour or until done!
SAFFRON RICE
Ingredients:
2 cups of rice
1 tbsp of butter
1 1/2 tbsp of olive oil
1 whole yellow onion
Salt
1 pinch of saffron
1. Chop up the yellow onion and set aside. Rinse rice in a bowl and set aside.
2. In a pot, melt your butter and olive oil until bubbling. Sauté the yellow onion in the bowl for 3-4 minutes.
3. Add a large pinch of saffron to the sautéed onions.
4. Pour water over sautéed onions. I usually do double the amount of water to rice.
5. Once water is boiling and saffron has changed the color of the water, pour your rice into the pot and let it cook until all water has evaporated.
MEDITERRANIAN SALAD
Ingredients:
Romain lettuce
Tomatoes
Cucumbers
2-3 garlic cloves
Fresh mint
Salt
Lemon
Olive oil

Hi Amanda. I’m literally crying watching this. Your dad reminds me so so so much of my dad who I haven’t seen in a year and I miss him so much. We’re also Palestinian and it was hard not to cry listening to him about where he’s from and I’m sure how hard it is knowing where you are from but not being able to go there. I hate the occupation. I loved hearing your dad tell us about his views on food. I follow an autoimmune protocol for health purposes and one of the tenets when you start it is to avoid any refined cooking oils, stick with olive, avocado, or coconut oils. He is absolutely correct about vegetable oil being bad for you - canola oil is horrible! The few times I've had highly processed oils in the past three years have put me in so much pain, because the body cannot handle them. I've since added sesame oil back in. This chicken looks SO good, as does the rice and the salad.
