Rogan josh, also spelt roghan josh or roghan ghost, is an aromatic curried meat dish from Kashmir.
It is made with red meat-traditionally lamb, mutton, or goat-and coloured and flavoured primarily by alkanet flower (or root) and Kashmiri chillies. It is one of the signature recipes of Kashmiri cuisine.

Ingredients for making Kashmiri Style Mutton Rogan Josh Recipe

Curd - 300 gms
Fennel Powder - 1.5 Tbsp
Dry Ginger Powder - 1 Tbsp
Shahi Garam Masala - 1 Tbsp
Salt - to taste
Kashmiri Chilli Paste of 12 Chillies
Water
Mix Well
Mutton - 1 Kg
Mustard Oil - 1/2 Cup
Bay Leaf - 5
Cinnamon - 1
Mace - 1
Black Cardamom - 2
Green Cardamom - 8
Asafoetida - 1/2 Tsp
Add Mutton Pieces
Add Curd and Spice Mix
Clarified Butter - 3 Tbsp
Ratan Jot - 1 Stick
