Good one. I'm Kashmiri and this looks pretty authentic and delicious...❤ One point I want to make is that if your meat is already tender like young goat or lamb, be careful with the pressure cook times. Thirty minutes would turn the meat too mushy and completely dissolve into the soup. Better to be conservative with the pressure as you can always boil longer if still too tough. It's 530AM and I already want to eat this with rice...😀

or just cook the meat some 3-4 hours and leave the pressure cooker away if you are not in a hurry. I have one, but use it only for potatoes which is a staple food here in germany, never for meats...

This recipe I prepared for my friends. And, although I love lots of your recipes, this is definitely my favorite one. It was so flavorful! And the next day I extended the leftover lamb meat by adding some crispy potatoes and peas. We love it too

Wow! What an excellent channel (and recipe) to stumble upon. My wife loves Rogan Josh (Western style), but I think this will take it to a new level. And what's good is that the heat/spiciness seems very easy to control. Really clear and concise instructions, obviously very knowledgeable. I made ROGAN GOSH little different. I fried the onions first and keep aside. In that oil, I put mutton/beef and fried till they brown and put garlic & ginger paste along with all masalas till the water dried up. Then I put them in pressure cooker and cook for 35 minutes. When the meat got tender, I put crushed fried onions and little ghee and then coriander leaves. Keep 3 minutes boiling and put off the stoves. Keep 20 minutes in dham. After that hmmm....... (Marinate the meat with ginger paste and yogurt with coriander powder, turmeric powder, salt, Kashmiri Chilli Powder for 30 minutes.) I also put some tomatoes. Try it, my brothers and sisters.😅

That sounds amazing !! I do the same when I cook lamb curry but as I said, Rogan Josh following the Kashmiri Wazwan style is made in a very different and unique way. The Wazas (chef cooks) do not marinate the meat as they use very fresh meat so marination step is just not followed. They even do not fry and brown the meat. They believe in cooking the meat by first making a broth and then braising the meat in the broth with spices. It is a totally different approach but turns out to be very comforting and delicious. I tried my best to stick to their method of cooking as the dish originated there.

Hi, Bumbi. This rogan josh looks amazing. It's interesting to see that you start the lamb/mutton cooking in water. My mother always started her Irish stew in the same way, and I follow her example. The meat was much more tender than the browning method, with a better flavour, imo. Then too, the lamb stock can be incorporated into the dish. Looking forward to trying this rogan josh. The same taste component is here obtained by the browned onion, in other asian cuisines by soy and fish sauce. Browning the meat is als done often wrongly in to large quantities and thereof to low temperature - so the meat dries out. Low quality "turbo-raised" or meat with fraudulently sded water meat also does much damage because you hardly can sear it.

Just made this, it was amazing! I previously did the more western style recipe many times, and even made it in an open fire couldron in the mountains. This one is much more delicate, as some of the ingredients go in at the right time and in the right consistency. This way it was even more complex and rich, even though it is hard to match the consistency of a wood fire cauldron stew/curry :)

@nathangrueber9834 there is a huge debate regarding this. What I know is in West Bengal we call all vegetable curries as “tarkari” where “taral” means sort of soupy watery gravy and kari comes from the word curry and not curry leaves as use of curry leaves was not that common in Bengali cuisine in olden days. So I believe what I’ve been hearing since childhood in my native language. I don’t see anything wrong in calling something as a curry. This is my personal opinion. Happy New Year to you.
