Good one. I'm Kashmiri and this looks pretty authentic and delicious...❤ One point I want to make is that if your meat is already tender like young goat or lamb, be careful with the pressure cook times. Thirty minutes would turn the meat too mushy and completely dissolve into the soup. Better to be conservative with the pressure as you can always boil longer if still too tough. It's 530AM and I already want to eat this with rice...😀

or just cook the meat some 3-4 hours and leave the pressure cooker away if you are not in a hurry. I have one, but use it only for potatoes which is a staple food here in germany, never for meats...

Hi, Bumbi. This rogan josh looks amazing. It's interesting to see that you start the lamb/mutton cooking in water. My mother always started her Irish stew in the same way, and I follow her example. The meat was much more tender than the browning method, with a better flavour, imo. Then too, the lamb stock can be incorporated into the dish. Looking forward to trying this rogan josh. The same taste component is here obtained by the browned onion, in other asian cuisines by soy and fish sauce. Browning the meat is als done often wrongly in to large quantities and thereof to low temperature - so the meat dries out. Low quality "turbo-raised" or meat with fraudulently sded water meat also does much damage because you hardly can sear it.

@nathangrueber9834 there is a huge debate regarding this. What I know is in West Bengal we call all vegetable curries as “tarkari” where “taral” means sort of soupy watery gravy and kari comes from the word curry and not curry leaves as use of curry leaves was not that common in Bengali cuisine in olden days. So I believe what I’ve been hearing since childhood in my native language. I don’t see anything wrong in calling something as a curry. This is my personal opinion. Happy New Year to you.

I cringed each time brown onions are placed on paper towel. IMO, all the flavourful oil are wasted on the paper. I always will blend it and so relieved to see its done the same here. Thank you for the receipe. Will try cooking this. Oh n i love yr soothing voice. Watching from Singapore 💞

Wow! What an excellent channel (and recipe) to stumble upon. My wife loves Rogan Josh (Western style), but I think this will take it to a new level. And what's good is that the heat/spiciness seems very easy to control. Really clear and concise instructions, obviously very knowledgeable. Just made this,the sauce wasn’t that thick so I added some flour to make a roux now I have an awesome tasting thick gravy with so much flavour, thanks again, this recipe has just been noted in my recipe book. ❤

(I still have trouble getting both the potatoes and cauliflower to the correct doneness in Aloo Gobi without one or the other being mushy.)

Add the potatoes first and cook them a little bit. Add the cauliflower a little later. Cut the vegetables more or less of the same size and thickness.
