Someone said Indian food is unhealthy because they're not fat! Actually because of their ingredients & spices like tumeric etc, they have very low levels of cancers. Dosa is best in the South. In North they have Thali, lots of little veggie dishes, usually refills are free, ask if going to a Thali place. Curry houses overseas are mainly by Bangladeshis. Most global travelers agree, the most amazing country is India, in fact it's many countries in one. From all sorts of climes & landscapes to numerous foods & cultures.

Indian food outside India is very unhealthy, especially north indian in curry houses, using cream, and shortening added to add flavor since cooking real indian food is extremely labor intensive.

I'm watching in England where we have a large Indian sub-culture, especially in Manchester where I live "(all the big cities really, as well as several towns...there are a lot of Indian people in England period, let's leave it at that). I had a point....oh, Tamarind in Tribeca is the only Indian I have tried in NYC but I enjoyed it. My rule of thumb is to find somewhere that Indian people eat and then go there. Same for Chinese restaurants. You get the idea.

You could dip a little more or even scoop larger amounts of chutney with the dosa or vada if it is not too spicy for you. Generally people dip the dosa (or vada or idli) in either chutney or sambhar at a time but not both at the same time. Anyway I feel that if you dip them in sambhar after dipping them in chutney, the sambhar washes away the chutney.

I always worry when people call these doughnuts and crêpes. The problem is people expect them to be sweet, find that they're savory and that disconnect between what was expected and what was experienced causes most who try it to not like it. Call them sourdough doughnuts and sourdough crêpes. And mention that they are savory before tasting them. That's the best way to describe it. And sambar is not a sauce, it's more of a lentil soup.

Hey Jon, FYI dosas, vada's & idlies has another way to eat like how a typical South Indian eats. Instead of tearing them and dipping a South Indian spoons out the curry and chutney on the Dosa, Vada's and Idlies and start digging in with your hands.

I live in South India and we rarely dip the dosa in chutney and sambar. Try them individually. Also, I recommend just putting the piece of dosa in your mouth and then drink sambar. You require a decent quantity of sambar in your mouth along with the dosa to know how well they actually go together.

U should make a scoup of a dosa and fill it with sambhar and chew it couple of time after that when u feel the flavor and rest is inside ur mouth THEN put coconut chutney in ur mouth and feel the trio that will give u the full flavor experience

The sweet dish in your hand can be Prasad (an offering from the temple after they’ve worshipped) t can be sweet pongal or halwa also as it’s a South Indian temple it can most probably be kesari bath.
