Great video... Simple is best...Brick oven, wood fired...chicken...loved the garlic broth pan under the bird.. I lived, worked and went to school on famous bay known for crab...the molting season gave you that brief window to obtain softshell crabs alive. I also bought them in LA alive 24 to a box...when the season came...flown in by my seafood company in Santa Monica. Loved the fried crab and the curry sauce... I loved how you practiced 'safe chicken' while dismembering the bird. 🙏🙏🙏

The garlic broth takes the taste of this roast chicken to another level!!! I don't like crabs, crabs are very expensive food in Taiwan and they have a fishy smell if not handled properly. This soft shell crab dish is very delicious, it seems that I am more comfortable with fried food, haha.

@@flyingmousefood the problem I have with crab in Asia...it is no good compared to all the crab species I grew up eating and catching in the Western Hemisphere. King crab..Alaska Dungeness..Northern California. Blue crab..East coast .. Stone crab..Florida.. Spiney crab ...Jamaica All are better and sweeter. If crab smells fishy..it is dead and old.. I am used to live crabs or in the case of the King..they process in Alaska right off the boat alive and freeze it for shipping at factory... Yes...expensive....for sure. I used to catch them or buy them from man who just caught. You are right about that chicken..another level.. Love how you find these great places!!!!!
