For those wondering the Water running behind the Wok, it acts as a Cooling system for the entire Wok Station & for cleaning as well... , So No Water is Wasted. it has reservoir and pump on it (some) If you turn OFF the flow during cooking, The burner will/might eventually Melt the entire station... potentially destroy all the equipment due to massive heat accumulated.

In Thailand they have these "parking-lot" street restaurants that pop up after business hours and they have a giant ice chest, three wok stations that sit on the top of propane tanks. One is for deep frying, one for steaming, and the last one for stir' frying, that's it with three workers and a comprehensive plastic laminated picture menu, they run a full busy restaurant all night. An amazing thing to watch. It's all about being organizatied.

this it the BEST roadside Cantonese food in the whole of Hong Kong..only locals know n the food is first class... no add-ons 2 look good... cheap-fast n delicious... better than fook lum moon.... no air-conditioning ,wet n dirty n crowded with poor/rich folks with cars double parked in front of u...... enjoy meals at cheap prices with warm cheap beer,.... no frills.

Dai-Pai-Dong restaurants are really delicious in hong kong. they are using very high heat with raw iron wok to cook the food very fast and keep them juicy. oyster sauce are mainly used.

1:05 That wok fire is really a sight to behold! What kind of gas do they use to feed that fire? It must be running at a very high flow rate and pressure. Looks more like a fighter jet engine with afterburner on.

Propane, anywhere from 100k to 200k btu/hr. Back then i see people use kerosene on pressure pot

@@MrKkdkk 100-200k BTU is really powerful. That's many times more than a typical outdoor BBQ, and all concentrated in a little circle under the wok. I'd be curious to know what their average cost is for propane per month! LOL!

@@msbrownbeast well i dont know how much it actually use, but the valve regulator on the cylinder is typically can output 2kg/cm3 pressure. where i live propane sells for .85$ per kg, and that’s for industrial, for home use half the price

A great description. The chef is blindingly fast true, but he also seems very focused in his work and all the movements are precise, I'm sure that if you slow down the video it would show that he didn't cut corners. But there's one more thing to be added. Those dishes that he turns out look absolutely delicious.

The purpose is to keep the water cool. They need to have easy access to cold water for cooking. If there is no water running into the container, the water can be brought to boil in minutes since it is so close to the stove. It’s a standard design for professional restaurant.
