For those who, like me, kept rewinding to get the quantities right: Combine dry ingredients: 1 1/2 C Corn Meal (255 g), 3/4 C Flour (90 g), 1/4 C sugar (30 g), 2 t Salt (12 g), 2 t Baking powder. Wisk together the wet ingredients: 1 1/2 c warm milk (360 ml), 1/4 c melted butter (56g), 1 egg - room temp.. Combine and gently stir together.

As an old Georgia girl, I'm 56. I agree 100 percent with using a cast iron skillet but sugar . My grandmother would come up out of her grave and knock me out If she ever saw me cooking sweet corn bread. Lol. I have had it . But I'll have to stick with my buttermilk cornbread,no sugar. Yours does look delicious I have to admit ❤

Paused the video and went and made it. Very good flavor. I'm a transplant from Louisiana, and cornbread was a staple for me as a kid in the 1960s. My wife is Latina, and we will use this recipe with a Mexican twist with added jalapeños, jack cheese, and roasted corn kernels. Thanks for the perfect balance of flour and cornmeal and the idea of preheating pan. That made all the difference in texture that I have had difficulty with.

Gosh, I love Corn Bread. Yes John, Mississippi here, we call sweet corn bread YANKEE CORN BREAD. I even love jam on corn bread. My favorite meal ad a kid was Chilli and Corn Bread. So good. Its really good to cube up butter in small cubes, out in freezer for about 10 minutes or so and add to your batter. So good!!!!

Im a lifetime Tennessean & this is nothing like the cornbread I make, lol. No sugar, no flour, just cornmeal, egg, buttermilk and some of the hot grease from skillet is added too, a little water can be added for the right consistency. I’m sure yours is amazing, just so different. As you said, it depends on where you’re from.

I don’t really use a recipe, I just eyeball it with the cornmeal, buttermilk, egg, etc. It would not be the same if you used regular milk instead of buttermilk.

@@saintbodhisatvayou can make your own buttermilk, just add a tablespoon of white vinegar to 1 cup of milk. This is how my Mom taught me when she made Irish soda bread and never bought buttermilk. The buttermilk just adds the sour flavor, so make sure you got enough sugar to contrast.

A life long Southerner here! Sugar in cornbread makes it a “cake”. Buttermilk instead of whole milk. Only use White Lily buttermilk cornmeal

Oh my goodness! You and I make the exact same cornbread. And yes! heating the cast iron skillet is the key. That batter needs to sizzle when it hits the skillet. So good with a big bowl of chili.

I like to brush mine with honey butter while still in the oven it browns and add gives it a delicious sticky top. I always do this when I make jiffy, too. As soon as it sets enough to brush the honey butter on around 9 minutes or so.

I haven't made cornbread in a while. I used to make sweet potato cornbread and I would also make blue corn cornbread since bluecorn has such a different taste then yellow or white corn. I loved mixing mine with poppy seeds and honey with out using sugar depending on who your feeding. I need to make it again.

I make cornbread often hear in upstate new york, I use a muffin pan and my recipe is similar to yours , I add a tablespoon of lemon juice to the milk, a quick form of butter milk , I also beat my egg with the butter then add it to the milk , it stops the butter from solidifying, talk about having something quick to snack on and it's cheap to make

This is basically identical to my cornbread recipe. We like it with corned beef, with soup beans, and mixed with diced onion, celery, scallions, crumbled together and used as stuffing for Thanksgiving turkey. Best stuffing ever!

I’ve been making your “original” cornbread recipe using a cast iron skillet for about a year now. The original uses brown sugar, buttermilk, and slightly smaller portions of the other ingredients. Here at 8,500 feet in the Andes, the original recipe always turns out perfect!

I always add sour cream to my batter I like the acid in there. Buttermilk basically does the same thing. I like to brush mine with honey butter while it’s still in the oven is gets a delicious sticky top.

I just made these. Cornmeal is slightly impossible to get and very expensive here, so I just used polenta which is the same but the grains are bigger. It's good but was missing something. Note to self: Tastes good with nuts and vanilla extract. Should double the sugar. It pairs well with a big spoonful of dulce de leche

9” is like a #6 or 7 depending on the brand of Cast Iron. I have a dedicated pan for cornbread and it is a #7 BSR. Perfect.

Rather than adding oil to a skillet and heating it, heat the skillet without oil. Then, melt two tablespoons of butter in the skillet right before adding the batter. Now, you get a crispy, buttery crust.

This looks great! One of the things I love to do with cornbread is to use it as a “lid” on chili. Oftentimes there’s not quite enough chili for a second meal, but whipping up a batch of cornbread to throw on top stretches it to a full main dish. Another reason to make cornbread from scratch is that you then have the cornmeal to make cornmeal mush! Also, cornmeal cakes are delicious.

In the summer, I usually avoid using an oven. I don't care about the crust, so I just make it in the microwave. Very fast and surprisingly good.

Yes you are right! This is Yankee corn bread, across between corn bread and sweet cake. Try a mix of white and yellow meal. Bacon grease, well, that's a done deal. Cast iron smoking hot, right on track. Crackling on top, yes or no. Thick in depth, not anything like the sheet pan in thickness as is often served. You nailed that one. Did I hear buttermilk, and baking soda? I sometimes like some hot peppers rings spread on top. Pork chops, pinto beans just a bit soupy to drizzle over the corn bread, fried taters, corn on the cob, fried apples, and greens!!!!! Oh, and you can forget the chops, as there wouldn't be room on the plate and wouldn't be missed, so save them for breakfast. Apple butter, jam, molasses for desert!!!! Just a WV Mountain version, not faulting yours at all! Just wanting to share with others.. Thank-you!!!

My husband’s family was from the American south, and he was used to very plain cornbread with no sugar. Whereas I am from the southwest, where we throw all sorts of stuff into cornbread, including chile and grated cheese. 😅 I personally like very sweet cornbread (with honey butter), and whenever I made it he would say, with disgust, “YANKEE cornbread!”

so i make my cornbread in a pyrex pie dish, which i pre-warm in the oven with 2-3 tablespoons of butter. when the butter just starts to turn brown, i pour in the batter, and it has already begun getting crispy-brown on the bottom & side. i mean it's not the end of the world if you don't have cast iron for this 👍

Our Romanian traditional staple in old times was corn flour cake(made with cornmeal, polenta flour). It's called Alivanca and beats all the other cornmeal sweets I ever tasted, or maybe because it is my country cuisine😅. It has lemon zest, vanilla sugar, butter, sour milk or just milk, sour cream, cottage cheese and some flour and baking powder. We also have salty cornmeal foods. They include sheep cheese, butter, eggs and pork scratchings(more like the whole thing with meat) and sour cream. They were originally eaten by the shepherds and it is traditional meal. That's called bulz.

Spicy cornbread is my favourite add some peppers, diced tomatoes and jalapeños and it's delicious! A more savory cornbread is what I prefer and with a good punch it makes for a beautiful side to anything too creamy like say creamy mushroom pasta or a juicy burger 😊
