I like to put the butter in the skillet and put it in the oven as it’s preheating. Meanwhile, I mix the other ingredients. I also like to add a can of cream style corn and leave out, or cut way back on, any other liquid. Although, adding buttermilk sounds like a good idea! I might just have to try that. And if my hubby still wants his “corny” cornbread, I can always (and have!) use whole kernel corn!

in a pinch I used 1 cup 2 % milk and 1/4 cup sour cream It came out the best cornbread I ever made. I was titled chef for 30 years, and in the industry for 40 years. Im giving this a seal of approval

Thank you, I looked up substitutions for buttermilk because we don’t have any. One article suggested thinning 3/4c sour cream with 1/4c water or a 3-1 ratio…uh no! I’ll be thinning it with the 1% milk we use. I’m going to make this tonight to go with the chili I made last night, I have the eggs sitting out to come to room temp now.

Try using sour cream instead of milk/buttermilk. Add melted butter to the batter. Melt the skillet butter until it sizzles, and pour the batter in as it's sizzling (eye off). Also, Instead of sugar, I add in honey after pouring it into the skillet, no need to stir just swirl evenly. I do this with Jiffy, Krusteaz, and even my mama's recipe 😉

I recently discovered you can freeze buttermilk. Actually any milk. When defrosted it does not have a good consistency for drinking but works excellently for baking. This is great because if you make something with buttermilk you usually don’t use the whole carton

There is a powered buttermilk you can get. I use that all the time, since a whole container of buttermilk would go bad on me. The powered works just fine.

The powdered buttermilk is better than freezing it, plus it lasts in the refrigerator a long time.

Defrost the milk in the refrigerator then heat it while stirring till very hot don’t boil then cool & refrigerate again, it will be good for anything. I can’t drink a whole gallon alone so I freeze most in smaller containers for later works great.

TIP: Put about 1/3 cup (yes 1/3) of vegetable oil in the SKILLET 🍳 and heat in the oven until hot BEFORE you put the mixture in the skillet. Mixture will bubble and cook as soon as it hits the hot oil, then bake in the oven. Keep an eye on it as baking time changes a bit because of the heated oil. Sounds nutty but AMAZING!!! Makes a helluva difference! Thank you so very much for sharing this with us ❤

You can always go old school and fry bacon in the pan first then remove the bacon and add the batter. The bacon grease adds flavor and makes it not stick.

One thing I learned to do is after the batter is completely mixed, let it sit for about 5 minutes to allow all the dry ingredients to fully hydrate before cooking.

The buttermilk hack is something I learned im high school when I worked in a bakery. The buttermilk makes the cornbread rise more! 😋 And you are certainly right about adjusting the oven temp because cast iron retains heat and more bakers need to know this!

Odd because for over 30 yrs I’ve used jiffy cornbread mix following the directions tho with 2 additions - I add sour cream to the batter and I heat up my iron skillet in the oven at 400f with a fair amount of bacon drippings - never over baked never too dark and it’s crazy tender and moist every time !

Tis' is true about the buttermilk! I use it when I make my cakes...especially my Southern Red Velvet cake and biscuits, too! My mom uses the box directions with the addition of two heaping table spoons of sugar AND one cup of applesauce. Always comes out moist. They loved it at every restaurant she ever cooked at.

I use applesauce in place of the oil and reduce the eggs in brownies even cakes but it defies her logic, and added to baked beans in the oven thickens plus sweetens them too! 💕💯

@@sgt.kilrain6891 good luck. Let me know how it turned out for you. (grease the pan like crazy... and if you have any baking parchment paper (or tin foil in a pinch) cut it and put it into the bottom of the pan and then grease it too, cause it is easier to get out if only stuck to sides of pan. :D

I just want to say “Thank You” for this Jiffy hack! I watched this video about a month back and finally utilized it for dinner tonight. This came out so amazing that my boyfriend scraped the plate. It taste homemade, sweet, and super moist, not grainy at all. This will be the only way I do my cornbread from here on out. I made 1 moderation: I didn’t have buttermilk and I don’t use whole milk often because it will just sit in my refrigerator and go bad. I did however have some evaporated milk, which I keep on hand for numerous things and it did not disappoint at all. I will buy some buttermilk and make it again and see if it makes a difference in taste but the way it came out made me beyond satisfied.

When we make chilli, we usually have enough leftovers for two small servings (there are 3 of us). So, I pour the leftover chilli into a pan, then pour cornbread batter on top and bake it in the oven. Incredible, and a good use of leftovers!

I've used Jiffy Cornbread mix for years. I usually add regular corn meal to it, more milk then it calls for and yes, bake it at 350 degrees. One time I added part of a can of creamed corn and that turned out good as well. I've also used it to make cornbread stuffing for the turkey. Since I live alone now I just make one box of it at a time so will have to adjust the rest of your ingredients to that. .

I have used a can of cream corn in place of one cup of milk in a corn bread recipe. It makes it much more moist plus you have an interesting texture from the creamed corn. I wonder if I could do that plus use the buttermilk or if it would make it too moist.

I made this cornbread last night. It was so delicious. I did cut back on the sugar to 2 and 1/2 Tablespoons. I like mine less sweet. I finally made good cornbread. It has always been dry and never would rise. But your recipe was perfect and so amazing. I will never use a different recipe. Thank you for sharing.

This recipe is the bomb. I've made it 4 times and once for Thanksgiving at a friend's house. Her husband swiped all the leftover cornbread and wouldn't let it go. It is seriously the best cornbread I've EVER had. Now I know why I never liked cornbread before. I did not have buttermilk, but I substituted sour cream cut with whole milk. I used the same amount the recipe called for.

Made my New Years. I didn’t have buttermilk but I remembered reading somewhere that you can add sour cream as a buttermilk sub in baking. I used about 3 big table spoons. It worked, still added that nice moisture and didn’t corrupt the sweetness. Thanks!!

You can make buttermilk with white vinegar or lemon juice in the milk. Just let sit about 15 minutes.

As a farm kid from TN, I prefer honey on biscuits and sorghum on cornbread. My dad and grandad taught me to put a blob of room temp butter on the plate and mash in some sorghum with a fork, then spread it on the hot cornbread. 😋 ❤

Thank you! I made this today (January 14, 2024) and it was wonderful! The honey butter glaze is the finishing touch! I halved the recipe since I was just cooking for me and my hubby and cooked it in a 8 X 8 square baking dish that I sprayed with Pam. Perfect size for us and still had leftovers. Will be adding this to our list of favorite recipes and will make the full size recipe when serving a larger crowd. I am thinking next Thanksgiving and Christmas!

Oh my goodness this is the exact recipe I have used for my jiffy cornbread for 50 years. There is one exception I use a little bit more sugar and I have never given it the Honey buttered glaze! You have helped me up my game! My kids and grandkids are going to love this. I want to thank you so much for sharing this you have made my day!

Adding a can or 2 of cream corn also makes it good and moist. I love Jiffy cornbread. I like rubbing a stick of butter on top as soon as it comes out of the oven!💝

U can purchase powdered buttermilk at wal mart I use it all the time, also 🌻 sunflower cornmeal has everything in it already always beautiful crust being from Selma, Ala. We don't use jiffy we are all natural, Heeey! God Bless! Sis. LILLIE Daniels.

Ms. Mansa, Here is a tip for your viewers, If you don't have any buttermilk substitute the butter milk. Use regular milk added a couple of Tablespoons of vinegar or lemon juice, stair wait for a few minutes before you use it.

The best hack ever! So delicious! One commentator recommended heating the cast iron skillet. It was a great idea. Used the vinegar in milk for my buttermilk, perfect. For 1-1/4 cup of milk, I used 2 tablespoons of vinegar. The absolute best recipe!!!

My "Nannie" (*Grandmother) taught me this method about 50 years ago. She'd have me mixing up everything in a bowl from the time I was able to stand up in her kitchen chair. She paired this hot, buttery cornbread🧈 with the most amazing Collard greens ever, telling me it would make my hair grow! (*But that I had to eat it ALL!) 😅 She'd have me mash up my cornbread in my greens and eat it with my fingers, saying, "It's 'SOOPA-GOOD'!" 🤗 At first I hated greens, but this buttermilk cornbread completely changed that! Now I can't have one without the other... scratch that... I can eat several slices of my Nannie's cornbread at ANY mealtime, with an extra dallop of meltING butter and sometimes some honey🍯! 😋 'Cuz it's 'SOOPA GOOD!!!' ** buttermilk, the melted butter before baking, and the cast iron skillet is key, and that golden brown crust is the BEST part!😉

I tried this recipe and I love it. I will continue to use it and tell my "cornbread" friends and relatives about it, It comes out moist and surprisingly not as sweet as one would think since you add an additional 4 tablespoons of sugar to 2 boxes of Jiffy which is generally sweet cornbread. It's just right as far as the taste and moisture of the bread. I am definitely sold! Also, I was out of buttermilk so I made my buttermilk as advised and it turned out wonderful. Thanks for sharing.

My mother used to do jiffy once in a blue moon, but she never followed the box. She made it as if she were doing regular cornbread...we never knew until we were much older that she did jiffy once in a blue moon. She didn't add a lot of sugar though, she did add extra cornmeal and other stuff. She always used buttermilk even on her regular cornbread and a cast iron skillet.... I'm talking more that 55 yrs ago. She said the old fashion buttermilk is best. I still use her way, as you know they didn't write it down, you had to be in the kitchen watching. She also never used the box cake instructions either, whenever she made a box cake. She mostly did scratch.

That looks so good 😍. I used to used Jiffy for years. When my children stopped eating pork I stopped buying it. I make it from scratch. I use equal parts flour and Yellow Head cornmeal. Jiffy now makes a vegetarian cornbread mix. Great video, I love cornbread and I like mine sweet and thick like cake also! 💜💜

My son and I made this to go with our dinner tonight and I am here to tell ya, without a doubt, that this is the most perfect cornbread we've EVER had!! I tweaked your recipe just a tad but it's STILL your recipe. Here's what I did... Ingredients: • 1 stick of Butter, melted • 4 Tbsp Sugar • 1 ¼ cups buttermilk (I didn’t have any so I made my own by adding 1Tbsp and 1tsp of white vinegar to 2% milk, let stand till thickened, about 1 hour) • 3 eggs, room temp • 2 boxes Jiffy cornmeal mix Directions: 1. Cut up the stick of butter and scatter around inside the cast iron skillet. 2. Place skillet into cold oven, then preheat to 350. Butter will melt while the oven is heating. 3. While oven heats up and butter melts, dump both boxes of cornmeal mix into a bowl. 4. Using a wire whisk, break up all the lumps, add the sugar and mix evenly…set bowl aside. 5. Using a separate bowl, crack the eggs and whisk well. 6. Add the buttermilk to the eggs and mix thoroughly. 7. Create a well in the middle of the dry ingredients and then pour in the bowl of wet ingredients…give it a good stir till thoroughly combined. 8. Remove the skillet from the oven, carefully coat the sides with the melted butter and then pour the butter into the bowl of batter. 9. Mix well with the wire whisk, then pour batter into the hot skillet. 10. Bake for 40 minutes or until a toothpick comes out clean from the center and the top is a nice brown color. 11. Allow cornbread to rest for about 5 minutes before cutting it. WORLD’S BEST CORNBREAD!!
