I never leave a comment but THIS, this is important. If you are thinking of giving this recipe a try, stop looking through your search results! I made this humongous cake (for our asian family of 4 with mostly old people) thinking that we'd never be able to finish it. I couldn't have been more wrong. By the third day, the cake was still insanely moist and as mouth-watering as the very first slice. Just a side note, I only added in roughly 2/3 of the amount of powdered sugar stated in the recipe to get that "not too sweet" compliment from my Viet grandma.

Dear John, I made this cake for an Easter lunch. I make cakes, but usually they are simple. I make Maida Heater's 62nd Street Bundt Cake with lemon syrup, or a Texas sheet cake where I pour the frosting on the top. I also make a cake in a loaf pan that has a liquidy chocolate core (it ships well). Nothing with layers or "dollops". There's something about your kind, gentle and encouraging teaching style that made me think "I can make this layer cake!". I wanted to use lemon curd between the layers, and one of my running buddies told me to pool it in the center and pipe a ring of frosting around it. It was a success! One of my guests asked for seconds, and a good friend who is a restauraunter said it was a "triumph". Thank you for coaxing me out of my comfort zone! Lorraine

I made this for my future sister in laws Bridal shower and everyone loved it and were shocked when I said I made it because they thought it was gotten from a bakery. I made 2 lemon layers, 2 almond cake layers and used a plain cream cheese frosting and a blackberry compote between the layers, it was honestly heavenly! I reduced the amount of powered sugar in the frosting to only 2 cups because I thought the sweetness to cream cheese tang was just right at only 2 cups. Thank you John for the amazing recipes!

8:39 I've made a lot of cakes with frosting and I've found that the confectioner's sugar asked for the frosting ingredients is always WAY too much! Powdered sugar is expensive and 7 cups of it is a massive amount. What I do is halve the amount of ingredients used for the frostings and see how much cake it covers. Usually, the halved amount is plenty. I'm going to start with that and see how it works.

I love lemon cake! To really pop that lemon zing...after layers are baked I use the lemon juice from the zest I added to batter and I brush the cake with the juice, top and bottom, as they reach room temp. Yum yum

The sugar is the same for most homemade frostings and delicious with no preservatives like canned grocery store frosting. He is amazing and a fabulous baker!

John, 12 years ago, my mother-in-law was turning 80 (she's still with us). Our daughter, then an 8th grader, made and decorated a huge lemon cake for the party. It was big enough to feed 40 people. When it came to the frosting, she sent her Dad to the store for lemons, and he came back with only one teeny little thing. We finally ended up using two pounds of lemons. The cake was so yummy that the frosting tasted like lemonade. After the party, all the kids kept sneaking extra cake for tbeir midnight snacks. By morning the whole thing was gone. Best cake we ever had. I do still want to try yours, too.

That looks delicious! And the bench scraper is a great idea. I will try that next time I frost a cake. Also wise to do the dollop test on something else first. I made carrot cupcakes for Easter and decorated them with little "carrots" that did not at all look like carrots, but something less appropriate for children. Ended up swirling them into the top of the cupcakes.

That looks beautiful!! I can't wait to try it. But, I have to say that I've been baking for over 40 years and I've always finished mixing my batter with my mixer & never by hand at the end. That's not how my mom taught me nor how her mom taught her & they were expert cake bakers. My cakes have always turned out beautifully, moist, light, fluffy, & delicious. My mom also taught me to handle all cake batter with care so when you're spooning it into your prepared pans you do it lightly and never mash down on the batter when you are going to even it out in the pans. I've never put the moist strips around my pans either. I guess to each his own & your cake certainly looked delightful & beautifully decorated.

I really enjoy the childhood and family stories. They are such a nice touch. It's kinda like a friend reminiscing with you as they are baking. Recipes with lemon it it are some of my favorites. I'd like a good pasta recipe with lemon it it as well. And the cake looks delicious.
