My uncle had a butcher shop under his carport. He got so busy during the winter that he had to quit. He didn’t have anytime to hunt himself. Plus he’s in his 70’s and doesn’t need to be doing that kind of work anyway. I know how my back feels after standing at the counter cutting all day. Now he only lets family use his shop. I commend you for your hard work. And that lady that’s helping you too. It’s hard work. We made our own deer sausage 2 years ago. It was an all day and half the night deal. We smoked it till the wee hours

When we butchered at my grandparents place we cleaned the pork intestines also, we used a board with 2 nails at the top about 1/2 inch apart, probably about an 18 inch long board that was in a pan with water, would scrape the intestines using a butter knife 1 time and then we would turn the intestines inside out and then clean them again with the butter knife until clean and ready to use, I think they nails in the board were just to keep the intestines in the center of the board, how to turn the intestines inside out just start to turn it inside out then use a funnel and pour some water in it, a cup or 2 then let the water turn it inside out, it's very easy to do

Never seen mountain oysters fixed that way before It's different. As a breakfast sausage i like mine with some heat. Had a question. How do get intestines cleaned with all the bad stuff (bad bacteria) in them? i know wash them. Be willing to try but don't want to make a mistake and cause food poisoning. Uncle does hogs so i can get the intestines from him.

You’ve keyed in on a great point. I’ve been concerned about the same issue. In order for this to be safe, the intestines should be used 1. The same day as harvesting the animal 2. Kept very cool or cold as possible anytime you aren’t engaged in cleaning or stuffing 3 if you can’t use them on day one, freeze them overnight and use them within the next day or two. 4. For longer storage they should be turned inside out and cleaned more thoroughly followed by heavily salting them before freezing.

Micah you need to turn the intestines inside out, then take a full flat surfaced knife and carefully scrape the inner layer off the intestines to clean them thoroughly. We always used a long J shaped stick to turn the intestines inside out. Carefully place the intestines on the stick down to the J. Hook the intestines to the J and in one simple move turn the intestines inside out. Then clean them as described above. If the inner layer is not scraped clean there will be a distinct unpleasant taster to the sausage
