I just made PB cookies with 1 cup PB and one egg, and 1/4 cup monk fruit/erythritol blend. Very low carb and delicious. Hint: dipping your fork in water will help you make the indentations on the cookies.

Thanks for the question! You can swap the egg for a "chia egg" -- mix 1 tablespoon chia seeds with 2.5 tablespoons water and allow it to sit for 5 minutes before mixing in. Enjoy!

I don't do calorie or nutrition facts for my recipes because I like people to focus on the ingredients and what they are eating first. There are lots of apps and sites out there where you can enter the full recipe, though, and find out the nutrition facts if you are curious.
