Another great way to stabilize whipped cream is to add two tsp of instant white chocolate pudding dry mix to one cup of cream. The cream will keep for a week in the fridge.

I just made the cake. The moment I mix the pineapples and cake mix together, it rise up maybe due to the egg whites in the cake mix. But I noticed your cake batter stays flat. Even after the cake is done, it rise up very high. Still taste good but the texture just so different than yours. Is it the angel cake mix you use ? I use the one from target, only one brand.

have you ever used that clear gel when making a buttercream frosting?

I'm not Noreen, but this wouldn't be necessary. Buttercream will stay the same if kept in the fridge, and clear gel won't save a cake if you leave it in a hot area. Whipped cream, on the other hand, will start turning back into unwhipped cream even in the fridge after sitting for awhile.

Buttercream frosting should not require a stabilizer if it is made properly. I have been making buttercream, both the Swiss and American varieties for over 30 years and have never had the need for a stabilizer. Buttercream when made properly does not need to be refrigerated either due to the high concentration of sugar and in the case of the Swiss, the beaten egg whites. Hope that answers your question.

Clear Gel or Ultra Gel is a modified food starch. It can me be used in hot or cold foods

Clear Jel needs to be ordered from an online source. To stabilize your whipped cream you would need to use gelatin.

Nothing. This recipe only works with an angel food cake mix. The ingredients are the key. Angel food cake is mostly egg whites. So using another cake is not going to work the same and will not render you the same result.

Such a great retro recipe. I am gluten free and just yesterday saw a gf angel food cake mix at Aldi's. Will give this a go with the gf mix and use jarred morello cherries also from Aldi's. Yum! Thank you for this wonderful recipe idea.

Noreen, This looks Fantastic! I do have a question. Where can I find instant Ultra Gel? Also, by using the Ultra Gel in the whipped cream, does that keep the topping from melting if one should leave the dessert out for guests to help themselves? Thanks so much for your time. Have a Great Day!

I purchase instant clear jel from Amazon. "ultra jel" is just a brand name. Here is a link: amzn.to/2s64pIu The clear jel stabilizes the whipped cream so it does not deflate and turn to liquid. This cake should not be "left out" at all. It should be kept in the refrigerator, served and any remaining portions should be returned to the fridge. This is not a good choice for a potluck or a buffet because of the need to keep it cool.

Hi! I was wondering if this recipe would work with a gluten free angel food cake mix? The one I have is from Kinnikinnick Foods. Its a 15.9 oz box. It calls for adding egg whites to the mix if I were just to make it normally. I do not see any egg whites in the ingredients list.

If it calls for adding egg whites to the mix then most likely it will not work. The regular angel food cake has dried egg whites in the mix.

+Julie Alexis you cannot use anything but angel food cake mix in this recipe. If you do t like the oranges leave them out. Not really anything to replace them.

This really requires the angel food cake mix. It won't be slice-able with a regular cake mix because you will have to add eggs oil and water. The angel food cake has lots of egg white powder in it that makes this hold together.
