When people say Indian cuisine, they need to understand that there are 28 states, each state having their own food culture... even within every state, there is diversity in food depending on area in that state (e.g. food in coastal Maharashtra is different from vidarbha in Maharashtra)... I am glad that you are giving a glimpse to other netizens of the food which is different from customized and typical food served in restaurants served within and outside India!!!

So I’m a chef and I basically did the same thing when my Indian in laws came to the states for our wedding. My mother in law is the scariest head chef I’ve ever worked under, but I now have this recipe set that’s unique to their specific regional, socio economic and religious demographic. I guarantee you I’m the only white dude in america who can authentically cook any three of these dishes lol

to understand Indian food, one has to understand Indian geography, the more u move towards Equator the warmer it gets, that means the food will get spoiled quicker, to preserve it use spices and oils, and the Recipe changes with Season and Geography.

Just a note for lentil lovers. Every lentils wont cook in one whistle. Some take 2 - 3 whistle and some might even take more. Best way to check lentil is cooked or not is to press couple of lentils with tip of your finger and if inside its white inside then its raw and needs more whistle until it completely mashes when pressed.

Now That's a typical Indian homemade meal ❤😊 Not those heavy butter chicken and naan 😂 Infact Even this whole thali was specially made for you guys i think. Otherwise even a single vegetable dish with chapati or rice is enough. Every Indian woman has her own recipe for every food they cook. And it will change with every home, city and state in India. Offering first bite of food to God or an animal like cows or dogs or birds is tradition in most Indian Hindu households ❤ P.S: That rice dish was actually more like PULAO 😅 Biryani is lot more complicated and time taking.

There is no such thing as a vegetable biryani. If it's veg is pulao. Veg-Biryani is just a term used by Vegan for their Pulao. While they cry inside as they know it's no where related to biryani.

@@TheTravelingChefs agree. I am sure it might taste good. However, sweets and savory tastes are mostly kept apart, with a few exceptions. My points was to inform you that this is not supposed to be done regularly, as you wanted to learn authentic dishes. Also, in many chat (the dish, not the messaging thing) stalls, you may find them adding pomegranates, which also is the maker's decision. This is in line with pineapple pizza.

@@TheTravelingChefs you bet! Mumbai is the economic capital, so to speak. Also is the home of bollywood, the hindi language movie industry. People from all india go there, also take their culture and food. Hence you will find the most diverse food in india, if you know the places. Hope your journey remains pleasing till the last moment. Make sure to go to some natural places as well if possible, coz mumbai will be real hectic. Good thing that you came to india. We have everything from snowcapped mountains to deserts and everything in between. Including pristine clear water beaches in andaman. India can be considered a mini world in itself.
