Kibbeling is a real treat. Netherlands is the second largest beer exporter in the world after Mexico, and indeed larger than the US and Germany combined, could even add France to the stack. This is largely due to Heineken. Heineken is 'old money'. A wealthy family that got rich of the Dutch East India Company and invested it all into a beer company that now rules the global market.

Fun fact: Heineken's name is old Dutch for "Little Hein". (the -eken part means little, in females it was -eke, like in names like "Hanneke, or Anneke". Later on this would be replaced by -tje, so Anneke would also become Antje. The double "nn" in Anneke is necessary for the proper pronounciation of the A as a short vowel. As the "ei" in Heineken is long, the double "n" is not used in that name.

In Amsterdam they eat herring in a strange way, so un-Dutch to me. You eat your herring dangling it above your mouth, lowering it in your mouth and then swallow it, preferably in one go. Period. Warning: when you eat i.e. bitterballen or kaassouflé etc, be careful. They are amazingly hot inside, it's quite possible you'll burn the inside of your mouth if you're not careful enough.... Heineken is Dutch. In fact Heineken in the Netherlands tastes better than Heineken in the US. Although even so, it's not one of our best beers imo. And Dutch apple pie in America is not the same as the apple pie in the Netherlands, not in the least!

According to google the Netherlands was indeed the largest exporter of beer in 2020. Grass cheese is actually a very mild cheese, it doesn't really have a whole lot of flavor to it, but it tastes great on some types of whole wheat bread, the darker the better. Although if you ever get the opportunity, try Old Amsterdam cheese, it's my personal favorite. It tastes quite rich and has been aged for a while. Not enough to become blue cheese (luckily, I really don't like the stinky feet cheese myself), but definitely enough to make it good to eat on a snacking board, on toast, or simply on a sandwich. That would be my advise for these cheeses, although I'm sure opinions on it will differ. Jenever is actually always served in such tiny glasses. It's strong liquor, and must contain at least 30% alcohol. It also has a pretty strong taste. It's actually decently common to drink a glass of jenever alongside a tall glass of beer. I think it's known as a 'kopstoot', or headbutt I suppose if you translate it, but I'm not too well versed in the world of liquor. I've seen people drink it whilst working at a lunchroom for a summer though. My personal favorite food is something called 'hachee'. I don't know if it's originally Dutch, but I think it might be. It's a pretty ancient dish that's been around since the middle ages, according to the 'always correct' wikipedia and there have been a lot of variations throughout the years. The typical way we I'm used to eating it is by slowcooking beef until it falls apart when you try to pick it up, cook it together with a metric fkton of onions in a deep pan filled with vinegar. Add stuff like cloves and laurel to deepen the flavor, preferably let it simmer overnight because it tastes even better on the second day... then serve with potatoes (or rice, like my mother usually does). It's very harty and perfect during the winter. Although don't eat it on a date, because you will stink up the place after eating that many onions. You can also add things like red cabbage and raisins to turn it from hachee into a hunter's stew. Some people serve it with red cabbage either way.

Pretty good overview, of course some details get lost. Like the stroopwafels the stand makes are not like the ones you buy at the store. The recipe contains more spices which is more traditional, store versions are still good but a bit more cheaply made so the fresh one will certainly be a good experience. And bitterballen are pretty much the same as a kroket in ball shape. Good poffertjes are made with a different flour, buckwheat as well as regular, the buckwheat makes it taste more nutty than another pancake. I'm curious what you will be send, the rules might be a bit strict on cheese through the mail, haha.

"Grass cheese": not that kind of grass, Charlie. It is 'grass' , the green stuff. No, just kidding. Graskaas is kaas, made of the first milk from cows after they have spent the entire winter in the stables, eating hay and other dry feed. They are then put back into the pastures... "on the grass". The milk then changes consistency and taste.

Old amsterdam is helemaal niet oud, door een trucje lijkt het oud. Geef mij maar echte oude kaas.

Ok....please stop calling things "typical Amsterdam" or "Only in Amsterdam" when it's a not invented in Amsterdam, and available in the whole country :/ The kaassoufflé is typical for the WHOLE Netherlands, and was invented in van Haastrecht by Hans van Bemmel. I noticed the same with the FEBO snack-wall. Yes FEBO was invented in Amsterdam, but it's not ONLY in Amsterdam. :D I'm still thankful for both inventions though hahaha!
