I used to work at a bank call center and spoke to many of the relay interpreters. I was astonished at how fast they could type (I could hear the keys clicking as they typed). Kudos to them for being there to help.

This video got me thinking... are those similar signs (like date/meet or chat/salad) the equivalent to rhyming words in spoken languages? If so, I really want to see some ASL poetry!

It's called "handshape rhyme." Just google around and you'll find some ASL poetry and/or Deaf poetry.

Question for the sign "FEEL": Could I still sign this with two hands? Or is this a one hand sign only/two hands has a different meaning.

FEEL traditionally is not done with two hands. It would look weird. Compare it though with signs like "What's up?!" -- which basically does an enthusiastic two handed FEEL with a corresponding facial expression. Also compare it with the sign EXCITED. Then see the sign DEPRESSED. However, FEEL is still just a one-handed sign (pretty much always -- and any exceptions would be some sort of fringe artistic expression).
