the funky smell comes from the black salt in the water (same stuff in hajmola) also the freshness comes from mint and coriander in the green chutney the sweet stuff is basically tamarind in sugar syrup the brown lentil soup is sambar, classic south Indian staple Also the dosa (stuffed pancake) was soggy, when you eat it out on the streets it's usually very crispy but gets soggy over time

Im just guessing but i don't think they are gonna like it. Firstly bcuz saag and roti should be hot and fresh while you eat it but they take out or order stuff so probably it wouldn't be hot (just like dosa they tried )and secondly they might not have ghee (clarified butter) , cuz ghee does make it taste even more better.
