Years back when we made jam, or preserves, we didn't process them because the sugar content was so high. Instead after putting the jam in the jar, we poured melted paraffin on top to seal them. That's the way my mother did it and her mother did it. Not saying that anything you are doing is wrong, just adding a little personal historical content.

Great show! Home made jam is soooo much better than store bought. Worth it! Happy to try these recipes! I grow cucumbers in the summer and usually make fridge pickles but this will be a fun change to enjoy after summer!

My bff got the ATK Seasons 1-19 Cookbook for me, and it's now the first Cookbook I pull off my shelves of several hundred cookbooks when I'm looking for a new dish to try. The videos are a bonus as they really add to the book. The 3rd recipe I made, after Chicken Adobo and a Lemon Layer Cake with Fluffy White Icing, was Strawberry Shortcake and it made me want to start canning strawberry jam.

10:37 I make home made bread & butter pickles quite a lot. regarding other veggies besides those shown in the segment, try Cherry or Grape Tomatoes, Baby Carrots (sliced into match sticks) and even Green beans. A sweet pickle brine makes anything taste delicious. enjoy & have fun!

You know what’s funny? If you cut the pickle ends in the wrong order it will be bitter! The lighter side with the brown dot needs to be exposed to air first before the stem end where it grows from. I’ve done the opposite plenty of times and it became bitter. I don’t know why this happens, but trust me, it does! 🥰

The "brown dot" is the actual "blossom end". It contains enzymes that break down the cucumber for the growth of the seeds. It MUST be cut off first, especially if you are doing a "natural fermentation" pickle.

I made this strawberry jam from fresh picked strawberries. OMG! Add that to homemade butter on toast and you're in heaven!! We also add this jam to plain greek yogurt 😋 👌 Love this recipe and how easy it is!

I love how you all made the strawberry jam, and the pickles and have to look for that canning container, and know where to find the lids for the containers. I also have to look up the company making the tool used to insert the jars into the pots also.

That's pretty much how I make my B&B pickles, but substitute just a 1/4 cup of light brown sugar for the white sugar. It adds a little bit of richness. I often do the same with some of my jams.

I made this jam last week and it was a big hit! My mother-in-law told me this was the best strawberry jam she ever tasted and she's 80 years old... I wonder if I would get the same results with the same amount of sugar using mixed berries like raspberries, blueberries and blackberries?

Awesome video and you two ladies work really well together. I have a couple of questions. I didn't see you use any kind of pectin in this recipe and all other recipes I've investigated have pectin. Can you explain how this works without pectin? Also, do you have an adaptive recipe that contains absolutely no sugar including sugar-substitutes? Thank you.

Hello when making a dill pickle do you use the same type of pickles that's the first question? Second question is what do you use for the brine for a dill pickle? Great demo! One question though: neither jarring demo showed what to do after the final bath of hot water. At 20:16, Dan says the pickles have "cooled for 24 hours". Does that mean they were left out for 24 hours at room temperature? Were they placed into the fridge after cooling for awhile on the counter? Something else? Clarification appreciated.

Great question. It was said 2 days is the cooling of the jars one day and the next day is placed where in a dark place, in a cabinet, refrigerator? Great question.

The jars should be left on the counter to cool on their own. THey should not be refrigerated, or made to cool down rapidly as this can reintroduce bacterial cultures in to the jars. Just leave them on the counter overnight and remove lids/label them in the morning, they'll be fine. For pickles I also recommend not opening them for at least a couple days, they taste better with age.

NEVER REFRIGERATORATE! Canning was created before refrigerators existed. Anything HOT should never ever be put in a fridge as it will raise your fridge temperature and could spoil things like milk and meat. Yuck! Just use "canned" hard on the counter or in a cabinet like you would find in a grocery store.

Not the sweet ones but I can eat a quart of pickles in the evening as a snack and drink the brine! My dills and sours go into quart jars. My grandmother also made the best fermented sour pickles on the planet and we used to have to put our hand down through that cheesy layer on the top. They were kept in a big glass jar with wax paper and then the rusty lid and every time we went we had to go get pickles. Now I make them myself. :-)
