The last time I made spaghetti sauce I used the Whole Foods store brand for all three canned tomato ingredients in the recipe (crushed, sauce, paste). I have used the same recipe for years but tried different brands of canned tomatoes, not using the same brand every time. The Whole Foods brand made the spaghetti sauce very bitter, so much so that I didn't bother saving the leftover portion. One of the best results I've had was when I used Hunt's brand canned tomato products in the recipe.

Red Gold is my favorite canned domestic, sweet with low acidity. For imported PDO San Marzano, brands like Mutti, La Valle, or Sogno Toscano are hard to beat, but the prices are rather high. There is a lot of counterfeit brands from Italy too, companies that import tomatoes from other countries and label them as San Marzano.
@Thommadura Жыл бұрын
Actually - the "San Marzano" can refer to a place in Italy where some small amount of Tomatoes are grown and canned ONLY WHOLE - there are no true Crushed,Paste, or Puree that is true San marzano. BUT - San marzano is also a type of Tomato seed. It is perfectly legal to use them and say so - but in Europe they cannot claim they are grown in San Marzano Italy unless they are. And the consistent winner of taste tests over the decades has been Rutgers Tomato Seeds - both Plum and Heirloom. These originate from New Jersey (Rutgers is the NJ State University) and when vine ripened they produce superior Taste and Texture. SMT Tomatoes use these and much of their tomatoes are grown in Central or Southern New Jersey. Southeast PA, and Northern Delaware. Remembering the Tomatoes came from the New World first, the idea that San Marzano Tomatoes are the "Original" tomatoes is false. In fact, the Original Canned tomatoes were from NJ.

Interesting. I am a gardener and I purchased seeds from Rutgers for the original Jersey tomatoes,...Rutgers and Campbell’s KC146. The Campbells tomato was grown for them exclusively and valued for its taste and reliability. I have been growing Rutgers for years because of its rich taste. Unfortunately as time went by producers wanted tomatoes that shipped better and had more disease resistance (and consequently had tougher skin.) Luckily these and a few others were bred back to their original state. It is part of the “Rediscover the Jersey Tomato “ project. Look it up. Totally worth it.

weedywet labeling regulations are full of holes which allows food processors wriggle room to be in compliance while not disclosing all ingredients. MSG is one of the most common ingredient that’s left off ingredient lists. The stuff is dirt cheap and literally for a fraction of a penny per serving they’re able to give the sensations of flavor. Pringle’s is an example of that practice. It’s basically carbohydrate pulp mixed with MSG and squeezed out of a machine onto a conveyor belt that passes through an oven. Another example is ketchup. It has MSG but isn’t labeled as such. Often undisclosed but sometimes indicated as natural food flavoring or one of its many chemical variants, such as modified vegetable protein, or hydrolyzed vegetable protein. There’s much more to this but I’ll save you from being overwhelmed with the intricacies of food labeling. It’s all about the money. And the public is kept at a safe distance so as not to interfere with their business. And for decades the MSG lobby (yes, that’s what they call themselves) have with the help of various government agencies have kept a steady drumbeat of disinformation about MSG. The European food and health agencies are more consistent in their regulations despite encroaching pressure from American manufacturers to “standardize” regulations. It’s a long story. And for lots of Americans it’s been cast as a fringe issue that only kooks are into. That’s too bad because it has major health consequences. It’s why it’s banned from baby foods. OK I’ll leave it there.

American English pronunciation has more mispronunciation than people think. It usually occurs regionally. "Saul dur" is never correct for "Saw dur" it's just misunderstanding the word "Solder." Americans pejorate tons of words. Cellulite as fat cells, are currently pronounced "Sell YOU lite". That's incorrect, it's "Sell you leet", "sell you lite" is insulating material. "Meh zo thee lee Oma" is actually "Mee zo Thee Lee oma". Americans love to change words because of lazy pronunciation. Like, you know what I mean, ya know?

ATK wrote of the Pastene sample, "We had high expectations for these pricey DOP-certified San Marzano tomatoes but came away disappointed. Because of low sweetness and acidity, their flavor translated as “weak” and “thin” - at best “clean” and “straightforward.” Like the other calcium chloride-free samples, they broke down easily."

The problem with this is few people actually use Crushed Tomatoes directly out of the can - most are used in a recipe for Sauce or Gravy - and then maybe some type of soup or stew. After cooking - adding all the herbs and spices - and the meats and veggies - it is really really hard to tell difference between the TOP liked brands. I have learned that Hunts, Red Pack, and Tutorosso (The American ones) are pretty much interchangeable - after cooking - and my Local Shop Rite often has them on sale for 12 for 79 Cents each. I am from NJ- and coming from the place where the BEST Tomatoes come from - In the Summer - I can buy REAL Fresh Plum Tomatoes (Or pick them from my garden) and YES - they beat ANY real Italian San Marzano - but it is not worth the trouble of canning them when the others are so good.

I'll have to look for and try SMT. But I always buy San Marzano DOP.

I am surprised Cento and Contadina were not in the group. I have never seen SMT in any store in my travels. also, you did not mention salt content. Good Fresh tomatoes do not need salt in the canning and there are many that only only have 20-25 mg sodium per serving. Healthier and fresher tasting.

Best ones I have found, that are actually not specialist, are "Parade" brand at Menard's. Most cheap tomatoes (including hunts and most store brands) often have a tiny bit of a rotten flavor to them.

In Canada, no one makes the best diced, and crushed tomatoes like Unico does. These are always my prefered canned tomatoes. Freshest tasting, not acidic and defined chunks with no excessive juice runoff.

of the brands tested, only Hunts is available in most stores in my area and I live in PA, where the favorite brand is from. So what’s up? What about Furmanos, Tuttorosa, etc. Never heard of SMT

SMT is canned by Furmano's. They grow what's called plum tomatoes for this particular brand. I worked there years ago, and left because it's hard to be hired on for full time employment. 4 years of working 6 days a week, never called off, and they wouldn't give me full time until I gave them a 2 week notice.

Where do you buy SNT Tomatoes? Are they a regional product? I don’t recall seeing them in Ohio.

I get them at my local Safeway store. If you don’t have a Safeway store Safeway also owns a bunch other grocery stores like Vons, Pavilions, Randalls, Tom Thumb, Carrs, Albertsons, ACME, Jewel-Osco, Lucky, Shaw's, Star Market, Super Saver, United Supermarkets, Market Street and Amigos.

I have been very pleased with the Italian imported Cento brand. Wondering why it was not included in the taste testing.

It was, just did not rank among the highest tested. There were a number of other brands tested that are not mentioned in the Video

I used to process my tomatoes with a hand-cranked "Squeezo" machine and froze the skinless and seedless results in Ziplock bags. I found I could take the frozen blocks of tomato puree, suspend them over a bowl, and a golden liquid would drain out leaving the very rich, deep red, tomato pulp in the bag. It wasn't hard for me to guess which liquid in the video had been cooked less.

The best crushed tomatoes: 1) Buy some of your favorite tomatoes. 2) Wash your tomatoes. 3) Cut an "X" on the bottom of the tomatoes. 4) Blanch the tomatoes. 5) Place the tomatoes in ice water. 6) Sterilize some jars. 7) Peel the tomatoes after it has been cooled off. 7) Cut the tomatoes in quarters and discard any undesirable part. 8) Place tomatoes back into the pot and mash while cooking. 9) Put 1 tbsp of lemon juice and 1/2 a tsp of salt into each sterilized jar as a natural preservative. 10) Place crushed tomatoes in the jar leaving approximately 1/2 an inch on top, then close the jar tightly. 11) Place jars in a pot of water, once it starts to boil add 10 more minutes. 12) Remove the jars and let cool for 24 hours. 13) After 24 hours check for vacuum and seal. 14) Date and label your jars. 15) Sit back relax and enjoy them anytime with a smile!!!

If you try to "convert" diced tomatoes into crushed tomatoes by putting them in the blender, you might be disappointed with the results. It would be reasonable to assume that diced tomatoes would be a versatile pantry item since you can't unring a bell, but diced tomatoes are often treated with calcium chloride to help the tomato pieces retain their shape during the pasteurization. You might notice that the tomatoes in a Taco Bell taco or some brands of salsa have this sort of firm, spongy texture to them. It's caused by the calcium chloride. Even if you blend them up and cook them for a while, you'll still have a mealy texture that you won't get from a more pure tomato product. Even within a single brand, if you compare the labels on diced tomatoes and crushed tomatoes, you're likely to find that the diced tomatoes have calcium chloride while the crushed tomatoes don't. Crushed are my go-to for pizza sauce (with a few extra ingredients of course). I strain a little bit of the liquid out so the pizza doesn't end up soggy. The reserved juices can be collected and stored in the freezer until you have enough to make the best focaccia you've ever tasted.

SMT ... is that a regional brand? Never heard of them, never seen them in stores in the Southeast (VA, NC, GA, FL, AL, MS) or in military commissaries.

My favorite canned crushed tomatoes actually come in a glass jar. Doesn't have the metallic bitter flavor, they come from Italy and are pure tomatoes with nothing added.
