wakajumba way too salty in my opinion. I spent a lot of time in Sicily over the summer and had local pecora which is superior to the Roman style Romano region pecora. The problem is in the US unless you live near a really good Italian deli your stuck buying Locatelli from Costco or supermarket.

@@acangial1 I wish I could try the local cheese you had tried, but is there a Pecorino Romano brand you prefer that is available in the US? I've seen these in a list of Pecorino Romano brands: Ambriola, Boar's Head, Brunelli, Costco, DeRoma, Emma, Fulvi, Locatelli, Mitica, Rio Briati and Zerto. Most, except for Boar's Head, Costco and Locatelli, are probably going to be very difficult to find. Any suggestions would be appreciated the next time I get to a large, quality Italian cheese market.

Their label says "Product of Italy", so I believe they have a commercial agreement with some local producers (on the lovely island of Sardinia-Italy, where 95% of Pecorino Romano is produced). They import and apply their brand, IMHO. Locatelli instead has its own dairy, in the village of Macomer, where it produces its Pecorino Romano.

I had never noticed sheep cheese had funk. I just noticed it was milder than goat's cheese. I also love the Spanish cheeses they mentioned. Perhaps this explains why I love Pecorino Romano - I agree that it doesn't get enough love.

Same thing happens with Feta Cheese: The Greek stuff is mainly, if not exclusively, sheep's milk, while a lot of domestics are made from cow's milk.

I actually prefer pecorino Romano over Parmigiano-Reggiano because I like sharper and more pungent tastes generally.. I just buy mine from Costco because the price can't be beat and it's good quality.

Grandmother born & raised in the east coast of Italy - always imported Pecorino Romano. Me, raised in Chicago, living 130 miles away in the center of Illinois for the last 50 years - where is the Imported Pecorino? Have to go home to Chicago for the real thing😱, and we do! The best Italian cheeses, Italian sausage, and canned San Marzzano plum tomatoes - well worth the trip for the "good" stuff" - Chicago!

You can tame the funk by mixing with parmigiano reggiano, but you can’t add funk if it’s not there in first place. For that reason, I always have Locatelli in my refrigerator 😀

For me, the Locatelli Pecorino Romano is a true Pecorino cheese. It is to pecorino Romano what Heinz ketchup is to ketchup. It is the standard bearer. There are small producers who make better cheese, but Locatelli is always available and its taste is consistent time after time. I prefer it in many cases to Parmigiano, but many Italians would disagree.

The pecorino is great, especially for carbonara. It can almost be used as substitute for salt in dishes that call for cheese, at least use less salt if using lot of pecorino. Its also cheaper than Parmigiano-Reggiano, probably because it's less well known.

Locatelli is synonymous with pecorino romano. The fact that it gets second billing is probably because they had people on the board that still think the Olive Garden is Italian food. Me: I always have pecorino with my pasta. Locatelli is so good that I make lines with it.

🇮🇹 Firstly, Pecorino Romano is saltier (something to consider in the preparation of food, to balance the sapidity), more buttery, it has distinctly more intense flavors, a more mineral taste and also herb aromas. In Parmigiano Reggiano you can distinguish hazelnuts, dried fruit, and other spicy notes, depending on the degree of seasoning.

as much as i love ATK i really feel like this is a BIG miss. i spent probably $100 dollars and made like 30+ cacio e pepe's with their 'WINNING' boars head pecorino, trying to get the flavor right, and it just never got beyond either too salty or too bland. if i would reduce the amount of cheese it would be bland, and if i increased the cheese all i would taste is salt. i finally just tried Locatelli pecorino and its a WORLD of difference in flavor. Locatelli has an almost blue cheesy flavor and is just infinitely more complex than the one note SALTY boars head. i made a SINGLE cacio e pepe with the Locatelli and knew i would NEVER buy boars head ever again. i feel like boars head won simply cause it was mild and neutral. as soon as i got home i sliced off a chunk of both boars head and Locatelli to do a side by side taste test and IMMEDIATELY knew the locatelli was light years better than the boars head. do yourself a favor and seek out Locatelli over boars head, ESPECIALLY if cacio e pepe is what you are looking to make.

I've tried it, but I much prefer Locatelli. I've also seen Locatelli at Wal-Mart (!), but if you want larger quantities you may need to go to a specialty Italian grocer. I've seen reviews of Locatelli and one individual favored Brunelli, but said Pecorino Romano cheeses by DeRoma, Zerto, Fulva & Rio Briati were similar to Locatelli and might be available at a cheaper price. Those brands probably won't be as easy to source as Locatelli.

🇮🇹 Amrican Romano cheese is a scam, a non-sense: "Pecorino" is a sheep's milk cheese, which is impossible to produce using cow's milk (the flavors are too different).

Jack, Jack, Jack, of course she chose Locatelli. It is a far superior cheese. I am 70, and my mother always-and I do mean always-used it, as did her mother (and mother-in-law). Locatelli is to pecorino romano as Kleenex is to tissue. Americans may like Boars Head, but Italians will choose Locatelli.

I think that their pallets are too American. If your going to taste an Italian cheese you need Italian pallets. Locatelli is good but it's hit or miss, like picking a melon. When you buy imported Italian cheeses you are not getting cheeses like in Italy. Products exported from Italy cannot be aged in the same way the Italian domestic products are.
