This video looks in detail at the beta-pleated secondary structure of proteins. It uses animation to show intramolecular hydrogen bonds forming between the N-H of one amino acid and the C=O of another further along the chain. These bonds explain why the polypeptide should take on a twisted structure and maintain it.
