I like to put strips of smoked salmon, topped with a small prawn (shrimp) and a spoon of caviar on top on oysters to 'big' them up. Great way to make a dozen serve two people as an entreè. Whilst I generally use a squeeze of lemon, the mignonette sauce would also work great!

What a brilliant idea. It’s easy to put away a dozen with just a squeeze of lemon, hot sauce, or spoonful of mignonette sauce. By adding those layers it sounds like it would be a nice rich and satisfying meal. Thanks for sharing that.
