Gorgeous. I routinely make this, only varying the sauces. and roll it a little different. Building the pile bottom-up: 1. Half the cheese 2. Half the meat 3. Half the sauces 4. Half the guacamole 5. Fries 6. Remaining guacamole 7. Remaining sauces 8. Remaining meat. 9. Remaining cheese Then roll. Building+rolling this way you get everything in every bite, and don't end up with half your burrito loaded with meat but no guac, or all fries but no meat, etc. Try it.

I love the California Burrito! Is so yummy. But I adore the great hot sauce available at most places around here in San Diego. Hey Sam, why not do a special that represents the great hot sauces available to accompany this plus a STCG amped up condiment bar with pickled spicy carrots, jalapenos, maybe even some grilled peppers. That would be awesome because I want to see how these things are made so we can make our own at home. Love your work!
Love the hot sauce for the Cali burrito! Lived in San Diego for 5 years and moved back to the east coast. Found a place in NC that makes them and carne asada fries, pretty close to the real deal.
