What is Cabalen?
Cabalen is a Philippine buffet restaurant chain that specializes in traditional Filipino entrees with influences from the Pampanga region of Central Luzon, including Filipino, Thai, and even Japanese cuisines. The majority of the meals are from Kapampangan cuisine. The majority of the restaurants are in Metro Manila, with one in Cebu and a single foreign operation in the US. Some of the locations are franchised businesses.
The term "cabalen" means "a fellow Kapampangan" and refers to a collection of casual to fine dining establishments that specialize in Pampangan-inspired authentic Kapampangan dishes and other Filipino specialties, like betuteng tugak (stuffed frog), kamaru (crickets), adobong pugo (quail), and balut (developing bird embryo). These factors helped pave the way for the eventual establishment of Cabalen, the Kapampangan specialty restaurant.
The Cabalen family opened a tiny Bahay Pasalubong restaurant in San Fernando, Pampanga, in 1974, providing specialized culinary items. It later expanded into a restaurant called "Ituro Mo, Iluto Ko." In 1986, the first Cabalen Eat-all-you-Can, Eat-all-you-Want Restaurant was built on West Avenue in Quezon City, which led to the establishment of more.
