At the beginning of October I was very sick and in the hospital. After I got out I recuperated at my aunt’s house and introduced her to your channel. We watched past videos for days. A month later she had a stroke that has mostly affected her speech. Fast forward to today. I put the most recent video on while I was cooking us both breakfast. She heard your voice and came running and pointing to the tv. She said “it’s her! I missed her!” We’re five weeks post ischemic stroke and putting together sentences is a big deal. It was a little moment that meant a lot to me. ❤️🩹

Here in Italy we don’t precook fresh pasta for lasagna Becky. It actually taste better that way too and doesn’t get overdone when baking. 😊 Keep the great videos going. Loving them all.

Watching you throw all your scraps out, oh my. I will freeze, until I have enough scraps. The garlic, onion, carrots, celery, all the makings for a great Veggie broth. I will boil it up and it is the best broth. Scraps THEN can be composted or given to chickens.

Make sense with homemade lasagne noodles. Here in the USA there is a brand that has a recipe for no bake lasagna on the box using dry noodles. The difference is using hot sauce and extra liquid.

Becky, For such thin pasta, I don't even cook it. I just assembled the lasagna with the fresh pasta. I add a bit more sauce and it works just fine. You may consider testing that to see if the texture is the liking of your family.

Becky, that was a tremendous amount of work, but worth the while!! I adopted your lasagna recipe probably 2 years ago. It's the one that adds 1 cup of heavy cream into the Bolognese sauce before layering! All the compliments I received go to you!! It's simply delicious!! When I was a child (I am 72), it was a given that when we walked into my maternal grandmother’s house for Thanksgiving or Christmas, there would be home made noodles hanging everywhere to dry, even on the backs of the dining room chairs! They would be a beautiful yellow because of fresh eggs and hand rolled very thin. We didn’t have gravy because we would put our noodles on the dressing or potatoes instead! I am now the noodle maker and I make them on my food processor and roll and cut with my Kitchen Aid noodle maker! Holidays without them just isn’t quite the same.

@@angel4short2 Thank you! I will never know how my Grandmother could roll the dough so thin and then roll it like a cigar and slice in thin strips. A funny story: As I mentioned, Grandma’s noodles were basically yellow. When my mother made them with store bought eggs, they would be a pale color. Mom wanted hers to be like her mothers so she added yellow food coloring. Isn’t something how we try so hard to replicate what we ate in the past but really can’t because we don’t have the same supplies!

my grandma has been watching your videos for a really long time, you are always up on our tv in the living room through out the whole day. she watches all your videos and lives and she loves your recipes as well. she had everyone in our family subscribe to you and enter the freeze dryer give away. she has really wanted a freeze drier for so long but we don't have the funds for it at all, which i wish i could get her one for christmas. she has gotten really into canning and dehydrating and stocking up in the past 2 years even with her age she does all the work herself! and you definitely have been a huge inspiration. hope you're feeling better after being sick and stay positive making these great videos!

When making lasagne with fresh homemade pasta you don’t need to pre cook your sheets - they cook in the sauce in the assembled lasagne dish. It would save you a huge step. 😊

I’ve tried it both ways and I kinda like to blanch it first. You have to use a lot of sauce or it will just suck up all the sauce if you don’t blanch it before hand. But that’s just my personal preference. It is a lot more work to Blanch it beforehand, however

Italian here: you don't really need to cook fresh lasagna, just make your béchamel sauce a little bit runnier, the "excess" milk of it will be absorbed by the pasta sheets and everything will come out great! Love your videos!

Becky I learned how to make my own starter and I made sourdough bread. IT IS AWESOME! I actually got it first-time. You can do it. The flavor OMG. And all you can do. Even with the discard. Put in cookies etc. LIFE CHANGER!

I love having soffrito (the onion-carrot-celery mixture) in my freezer so I can whip up a ragu anytime. If you’re short on Parmeggiano and you have aged or sharp cheddar lying around that will taste great too. Sharp cheddar is nice and salty like Parmeggiano!

Here's a little tip for you. When cleaning up flour, always use cold water, then go back over the counter with your warm, soapy water. The flour will come up so easily.

I know sometimes it hard to think of it but I noticed you have frost proof outdoor faucets so maybe take a colander with you and then you can give veggies a quick wash in the garden. Maybe cut off a piece of garden hose and that way you can rinse dirt off back in the raised bed. Just a thought!

Wooden folding clothes racks (made with dowels) would be a perfect thing to keep to use just for when you’re making homemade paste. You could drape the sheets on the rods and save a lot of counter space and eliminate the need for all the baking sheets. The lasagna looked divine!

Hello from British Columbia! Love your videos Becky. I too had pneumonia and was out of commission for the entire month of October. It was brutal. Becky, in your video today, you mentioned you considered making the Lasagne for Christmas. We too think our Lasagne is special and delicious. Lasagne is in fact our traditional Christmas Day meal. It's been a family favorite each year to do this together, my kids, growing up and now with my daughter in love and my grandkids. We all get not only involved with noodle making but putting the Lasagne's together. We put spinach in our lasagne to make the noodles green and the colors are awesome. We used the crank for many years and always no bowl, right on the kitchen table we make the noodle dough. This is the first year I too, have my first pasta attachment on my KitchenAid. Another tradition is after the Lasagne gets made up, we put the leftover sauce still in the pot and the leftover noodles in the middle of the table and chopped in chunks for fun and everyone digs in, loving it. Wonderful tradition and memory! I thought you might enjoy. Merry Christmas!

Becky, I agree with all the others that say cooking fresh lasagna pasta before baking is completely unnecessary. Nor do I add extra water to the bechamel, or thin out my sauce in any way. It comes out perfect every time. Firms up enough after baking, and waiting 15 minutes, to cut a perfect slice that holds together and looks beautiful on the plate. It’s a real time saver and no more racks and baking sheets to wash. I layer the fresh pasta on a baking sheet, with plastic wrap in between,until I’m ready to use it. Please try it sometime. You’d have more time to make more freezer meals! ❤🙏🎄.

You have to cook fresh pasta in boiling water if it’s not going to be baked , otherwise it’s raw and unedible. If it’s going to be baked in sauce it gets cooked in the oven so it’s not nevessary to precook it. Dry lasagna pasta sheets need to be boiled in water or it doesn’t get tender enough in the oven. Some say they just add water and bake it longer but that’s kind of iffy and sometimes the pasta is too hard or mushy.

Love homemade pasta! My MIL makes the best homemade pastas. Over here drooling over the big Made In stock pot. Maybe someday! I did find a pristine made in sauce pan & saute pan with lids at a local thrift store yesterday. $12.99 each. I was so excited. I can't imagine why someone would get rid of them. I actually just got a dutch oven for baking bread, I have always done my bread in stainless steel and had great results. I will say the shape is better with the cast iron and maybe a thicker crust...but they both eat great. You dont have to have the absolute perfect tool to cook or bake. I think people get intimidated if they only have basic supplies or a small apartment kitchen. You can turn out amazing things with basic tools.

I absolutely love that you washed off the butter and used it. Let’s be real for a minute, any home cook would do that and not change spoons every taste.

I do change the taste spoon. Actually put a bit in a small tasting bowl. That way I can taste and know to add herbs etc I just scoop a bit out into the little bowl with a ladle

Agree with the others about not precooking the pasta. There's enough liquid in your dish to cook it and it will absorb all the yummy flavors instead of just water/salt. When I make pasta, a drying rack is SO helpful. You may need several, but they're inexpensive. They keep you organized as you work on the strips of pasta. Of course I do recall my mother draping sheets of pasta on anything and everything she could! What a lovely Christmas memory you brought back. Thank you.

From Europe here and I thought that Bechamelsauce was the only sauce to use for a lasagna 😂. Now I'm intrigued to make it with ricotta, to understand the difference in how that tastes. Great work with all of it of course but especially with doing all that pasta. ❤

I look forward to every post you do. I was wondering, as you peeled all the garlic for your sauce, have you ever tried trimming each end and then putting all the cloves in a large stainless steel bowl, topping it with a plate or another bowl and shaking it like crazy? It’s like magic! The garlic just falls out of the peel or is totally out of the peel. It is also a great stress reliever-loud, but it works. I thought about this when you were harvesting the garden with your parents and you were talking about the whole day peeling garlic. Hope it works for you as well as it has for me over the years.

That was a pretty amazing feat...at least to me. Trying to make just one lasagna would have killed me. 😂 I have no Italian heritage in my family line or friend-adjacent so the idea of making sauce (gravy?) from scratch breaks my brain, much less making the pasta itself. I know it looks easy when you do it, but cooking is still a major energy drain to me. I am envious of all the people who know cooking as love and get excited about how to make the most wonderful tasting food for their family and friends. Can't wait to see you, your mom and your sis go shopping/cooking for the next big feast! This is what makes my holidays happy now; watching people create the holidays I never had without having to deal with all the people, cooking, and cleanup afterward. 😂 It's a good life!

Those lasagnas look so yummy! Our family has lasagna for Christmas every year. I never thought about putting veggies into the sauce and using a béchamel sauce. We always use ricotta with Parmesan, eggs, and dried basil for our filling. Cannot wait to make your version.

“Excuse me” snaps her fingers at her puppy 😂 So relatable! Years ago when Becky said she only uses béchamel sauce (instead of tons of mozzarella) and meat sauce for lasagna after their sponsored student who lived with them in high school made a family meal and said that’s how the Europeans make lasagna, I’ve never made lasagna any other way. My family loves it.

Hi Becky. Glad you are back up and around! I make my own pasta from fresh milled Kamut (Khorisan) wheat. It is also an ancient grain and the ancestor of modern durum wheat. It makes beautiful and delicious pasta. I have never cooked my homemade lasagna noodles before baking the lasagna in the oven. I have always just cooked it at the same time already layered in. Now I am wondering what difference it makes in the end result. It sure looks like so much more work to precook!
