I’m in love with this channel and have been cooking dinner for my roommates again, taking risks and cooking new things. If you make a big batch, you can vacuum seal and freeze them. If you don’t have a vacuum sealer, you can use a ziploc freezer bag and suck the air out with a straw in the corner before quickly sealing it shut

You can save a lot of trouble by including a short (maybe 30 min) autolyse rest right before you knead. Just hold back the yeast and a little bit of liquid and add it right before you knead, and let a stand mixer knead it. The Autolyse allows the flour to become hydrated and you'll have a pillowy, softer dough to knead.

My brother managed one of the most famous bagel shops in LA....way back in the 80's. So, we had a huge drawer of bagels in the house--always. I moved back to LA, so I still drive across town to get them from this mainstay. Recently, my wife brought home New York bagels in her carry-on. And I gotta say that those were definitely better. But they are a crazy calorie bomb.
