I wish I would have eaten there while she was alive. It was always on my bucket list. I was devastated when I heard she passed away and I knew I would never be able to fulfill it.

The Cajuns did not invent Gombo. French Acadians were introduced to Gumbo when they arrived in Louisiana after being expelled from Canada by the British. The Acadians (Cajuns) adopted the Creole food as their own upon their arrival in Louisiana and historical records indicate that Okra soup (Gumbo) was one of the main sources of their daily victuals. The myth of the Bouillabaisse origin is convenient because a claim can be made that Gumbo's origins are French. Mais le gombo vient d'Afrique.🤔

It is amazing how much credit the French get for Louisiana cuisine, which has its roots in Africa. The Cajuns liberally borrowed Black culture from their Black neighbors. Even their music came from former slaves.

Why would okra which is a vegetable aka Gumbo be used as a replacement for the fish of a French Bouillabaisse when there was an abundance of fish in the bays of Louisiana and the Gulf of Mexico?

The enslaved African's introduced their okra soups to Louisiana and it become a source of sustenance and satisfaction for all the classes of persons who would eventually reside in Louisiana. Okra is incorporated into meat soups not only in Louisiana but also on the continent of its origin - Africa, and in the Caribbean islands where the descendants of the enslaved Africans reside. Dried Sassafras (File) powder from the Native Americans was used in the dish when okra was out of season.The African contributions are still denied and a myth is spoken as truth.

Not Caribbean. Mostly the Wolof people of Senegal were the main, I’m talking about overwhelmingly, majority of slaves in Louisiana.
