In the UK we would definitely consider it a STEM career subject. Although career opportunities can be limited, and as a result very competitive.

Yes you could, but we would advise taking a post-grad course to specialise in some aspect of sport to enable you to be attractive to sports businesses if looking for employment.

Is this a BTEC level 3 course? If yes, then you can access University if your grade is good enough for the course entry requirements. I would imagine that a Mech Eng lvl 3 at the required grade would get you on to a Sports Eng course.
