One thing I do really love about you, Sophie, is when you walk. There's a pronounced spring in your step. It shows you truly love what you do and I've always said - when you get to work in the morning, if there isn't a spring in your step, change your job. Hey cool recipes! I make a red sauce similar to the third one. I add wine, way more garlic and usually mushrooms, summer squash and/or zucchini, and usually hot and sweet Italian sausages that I sear in a pan. But the star is my meatballs with a block of mozzarella cheese in them. Make meatballs with the beef, egg, breadcrumbs etc and then cut mozzarella into cubes and form the meatball around in. You have to fry these before putting in the sauce to develop a crust so the cheese doesn’t get out in the sauce. Rock on🤘🎸🤙

Recipe looks great. Watch them to see how close they are to my Sicilian grandmother’s recipes. She didn’t make a lot of cream tomato sauces nor a lot of onions more garlic and lots of Italian spices with tomatoes. Always plenty of fresh vegetables zucchini pumpkin and lettuces.
