Beer 300-400 ml
Cover and simmer for 45-60 minutes

80 minutes at 180°C
Bake the knuckle
120 minutes at 180°C
Reduce temperature to 160 °C for another 120 minutes.
Disassemble the shank and brisket
Place the meat in the mold
