I've been making this weekly pretty much since this came out. PROTIPS: 1. Add dry mustard to enhance cheddar profile 2. Smoked paprika works wonders. 3. Don't forget some salt and pepper. 4. Smoked dry tomatoes makes this godly 5. Use Barilla Protien plus elbows instead of chickpea to get more for your money and less fat 6. Use the fat you lost in the pasta and use 1/3 fat free cream cheese instead. Its easier to find and helps the cheese be more flavorful. 7. Keep the cheese thinner before adding to the pasta. Helps it spread better

For the pasta: Boil 4 cups of water Put in 224g of chickpea pasta and a bit of salt Boil for 7-8 minutes Filter out the water For the sauce: 160g of vanilla unsweetened almond milk 84g of fat free cream cheese 112g of fat free cheddar Heat the almond milk til it starts to steam, then put it and stir the cream cheese. Once mixed put it your cheese and mix more. Finally, put in your pasta and mix with the sauce. Good toppings for this are salt, pepper, no sugar bbq sauce, or garlic salt. 1148 cal Macros: 16g fat 102g protein 149g carbs Please tell me if I made any mistakes

Made it but had to make a few substitution. Walmart out of fat free cream cheese so used light cream cheese and only 60g. Also, out of fat free cheddar so did a 50/50 mix with mozzarella cuz i didn't have much cheddar left. Finally, I used Barilla protein + pasta instead as the macros were basically the same and I know they taste just like pasta. Immediately out of the pan mine was more stringy due to the mozzarella. However, its also very sweet because of the almond milk so I suggest adding a good dash of pepper to even it out. Also added some slices of Canadian bacon to make it even more anabolic, and caved by getting G Hughes and it definitely made the dish pop. Overall great recipe, just season to taste.

Since you like the Joseph's Lavash bread, you might want to look at their pitas. They make one with the same recipe as the Lavash bread (Flax, Oat bran, and Whole wheat), and it is a great change of pace for the tortilla wraps you have used for your wraps and sandwiches. Each pita can make 2 sandwiches and is 60 Cals, 1.5 g Fat, 9 g Carbs (2 g Fiber, no added sugar) and 6 g Protien. I think it will be a great addition to try.

I just made this recipe. This is my opinion for those who want feedback on the taste. The fat free cheddar cheese and fat free cream cheese leave a very bland taste. I used salt and pepper, but it really did not make it any better. I see a lot of people commenting saying they enjoy the recipe, but I guess I am one of the few who thinks it taste odd. Obviously this recipe is nutritionally better than your normal mac and cheese which is the point of making it this way. I've tried a few of RJ's recipes, and they have been good. This was the only one I had a problem eating. Thanks for the recipes though, RJ. I enjoy most of them which I appreciate.

Great recipe but one thing I'd add is to mix in a little bit of "light macaroni" that you can buy on amazon. In one serving (56 grams) it's 100 calories, 25g fiber and 7g protein. I usually do half regular and half light pasta but you could do half chickpea and half of the light for even less calories, just watch overall fiber intake

The key with these is that you have to use 2 or 3 different cheeses jusy like if you were making regular mac and cheese. What I do is I cook the pasta and add in greek yogurt 4 tablespoons of parmesan(40 cal) 2 slices of low fat cheddar(cuz I cant find fat free) and and 1/4 cup of part skim mozzerela and I add italian seasoning and steamed broccoli too

This recipe is actually insane. I'm a high fat traditional mac n cheese fiend, and this is just as good as the unhealthy thing. My personal addition is: 400g diced tomatoes in tomato juice - 100 cals 200g lean bacon - 220 cals 21g protein as much garlic and chilli as you want Add all to a pot and simmer until 80% of the liquid is gone 21g of protein for 350 cals, but it adds a ton of volume turning this into a 3 meal recipe easy

With Banza pasta it is essential to rinse in cold water to stop the noodle's cooking process, as well as to rinse off he slime that builds up as they cook. That being said it definitely has a unique flavor and doesn't taste very much like regular wheat pasta, however it is a decent flavor.

I always make mac n cheese for Thanksgiving but have been watching what I eat and didn't think I could make it this year. I'm definitely going to make it using this recipe.

I recently started learning more about macros. After a week of tracking my meals I’ve noticed that I’m lacking a lot of protein in my diet. I did one year of intermittent fasting and i loved it. I recently directed all my focus on tracking my macros and i was shocked to see how much protein I’ve been missing out on. I don’t like eating early in the morning i prefer coffee. I typically start to get hungry around 12 or 1. Would you recommend i look in to protein shakes? If so, which would you recommend. Keep in mind my goals are to keep my fat off and start building muscle and tone my body. Thank you for posting so often and sharing your knowledge! Much love!

Yum! I'm for sure making this over the weekend.. Another really good anabolic snack is sugar-free jello. 10 calories a serving and 40 calories per box. Even if I made 2 boxes and "accidentally" ate the whole thing. 80 calories, Big whoop.

So went to the store this morning when I woke up and got the noodles from Kroger for like 3.00 and just finished making them,super easy and tastes really good.to make it better add a lil pinch of bacon bits and some g Hughes barbecue sauce and damn that was some good Mac and cheese

I made it. Wasn’t big on it. But eating it while knowing it is better for me than regular Mac n cheese makes it taste 10x better
