I caught 40lbs of anchovies this summer with a net. I ended up canning a bunch of them this way and taste very much like small sardines. We also pickled some, made escebeche, fried them fresh, and salt cured a bunch.

I love those little salty anchovies. A tortilla pinwheel rollup with cream cheese, ham, pickles, and anchovies. A good ceaser. A flatbread pizza. Making all kinds of spreads for toasted sourdough or focaccia. Just a good canned product that i feel like is super easy to incorporate into almost anything.

@@wingdingdmetrius8025you rinse with water while in can. Also they save you having to extra include salt in dishes. I only eat them on chinese style or pasta style noodle dishes, sometimes into german potato dishes when there is a lightcolored sauce going with it. And frying them up is amazing too, you can bake up breadrolls with cheese inbetween like subway does it, throw some salad on there and crispy fried anchovies. When crispy they also mix well with rice

Don’t toss the salty guys! Sauté them in some oil with garlic - they’ll basically disintegrate and just become pure flavor - and toss with pasta. 🤌

Just picked a can up of the salty bois at the store today to do this recipe! They didn't have the brand he featured here but my local Kroger's brand was priced and packed well enough that I have hope they wont be junk. I have a leftover pizza I might try them on for the first time too. My only regret is that I forgot to grab some spinach to simmer with the sauce for pasta.

old comment, yes, but in the towns of Sumner\Puyallup in WA (US), there was an old fish cannery on the Puyallup river. A huge building spanning 10 acres, with extensive history. After the cannery side shut down it was turned into a huge furniture store (The Old Cannery) with a model railroad across much of it, and some amazing fudge. They do still have information about the history of the building, and it's a great place to visit

Mmm. anchovies. Nice video! I can highly recommend Zallo “Premium” anchovies - they’re the usual “brown” style anchovies, but they aren’t just pure salt - you absolutely can enjoy them straight out the tin. I love them with some good mozzarella and some sliced tomato and fresh basil on a nice bread, with a little drizzle of olive oil….

I just had a can of the Patagonia lemon anchovies. They were pretty good. These anchovies are kinda like little tuna fish in flavor and texture. I look forward to trying the garlic Patagonia anchovies. All of the Patagonia fish products I have tried are great, you absolutely get what you pay for with the fish.

My first experience with canned fish was when I bought a tin of kippered herring and another tin of anchovies. I started with the kippered herring, and holy heck, it was delicious! And then I opened the anchovies and BLEH! Salty, fishy, and overwhelming flavor! I took one bite and threw it out! I'm lucky I tried the herring first or that would the end of my canned fish adventures. Granted that was the only time but the future is bright.

In a lot of restaurants 'white anchovies' means pickled anchovies, the flesh goes bright opaque white and it's super sour and delicious. Instant order anywhere for me no matter where or when. A cafe called pōneke which used to exist in Wellington did them on slices of toasted baguette with a tomato salsa kind of thing. Wicked breakfast

My usual sardine is the King Oscar 2-Layer Brisling, because it's the only one I can reliably, cheaply get locally; but a couple of years ago, I bought a caught a good sale on a case of Wild Planet white anchovies, and preferred them until I ran out. I've also found frozen, raw white anchovy filets pretty cheap at Asian supermarkets like 99 Ranch.

Another great video by a budding star. Matt, those salty anchovies may not be for eating out of the can. Mediterranean people like southern Italians, use them to saute in olive oil to flavor sauces. Once you drop them into hot oil, they disintegrate. They add flavor to the sauce you are making. I don't think they are the "go to" eat out of the can fish. I'm still waiting for the Sicilian spaghetti fish with deenz and lemon! Remember Mark Bittman the writer from the NY Times?

My "woke attribution" was about those marketers of the fine deenz products you share with us, who sometimes write "floral" things about themselves on their packaging (which you usually toss away and it makes a crashing sound). But I admit it's mostly good to know stuff, that I also agree with (like saving the planet and stuff, since even Proxima b is pretty damn far away!!). I give them some slack, though, if they go overboard, since they are just harmless "fish mongers" trying to make an honest buck; and I surely will support that!! Sorry for my lack of "clarity"! ;D

I've always liked regular salty anchovies too! I almost always put them on a pizza, then cook the pizza. But, I also like to just eat them out of the can with some crackers. Also like sardines, but I like anchovies better. That fishy, saltiness with the olive oil is so good!

You know, I live very near a (well known very high end) sea food store [Barnacles > $100/lb] run by middle eastern folks with an army of fish deboners & preparers who teach you how to do stuff. Top of my list (after how to cook a 6 foot long crab leg to perfection - intact & without special equipment -) was how to prepare & cook fresh caught sardines, and also anchovies.
