I just started as a bar back at a pretty fast paced bar. While bar backing is relatively easy, it's hard to run bottles and wash dishes while trying to watch bartenders make drinks. This video was immensely informative with answering little questions that I wouldn't wanna bother the bartenders with.

@CourtesyoftheD2 жыл бұрын
@@steventwiddy3402 well in a fast-paced bar there isn't necessarily time for that... hell some bars are so fast-paced (not to mention LOUD) that we don't even answer customer questions, if you ask a question we'll turn to the next guest. if a barback really wants to learn their best bet would be going to the bar with their co-workers after work. most bartenders drink after work anyway, it's how we make connections with other people in our industry as well as unwind, but you'd be surprised how much of that after work drinking is done while talking about liquor, cocktails, and beer.

My wife and I have subscribed and enjoy watching Anders' channel for a while. During the pandemic in early July 2020, I had a fall at home and suffered a severe spinal cord injury. After a week in ICU and 2+ months of inpatient rehab, we were sent home to fend for ourselves. Each day at sundown, we celebrate Sundown Chill to reflect on the day and celebrate just being here for our Bonus Rounds. (Before my spinal cord injury, we both thankfully survived our horrific cancer battles in 2012-13.) Our go-to drink for the Chill is a Bourbon Blackhawk. While we love the cocktail-specific videos Anders does--which has broadened the "palette" of our pandemic-attenuated at-home drink selections--we found this episode particularly informative and entertaining. We were like 90-10 percenters on shaking versus stirring prior to this video. Now that we understand the bartender-science of the two techniques, we will adjust our Chill-related behavior to take these science-driven considerations into account. We particularly enjoyed the production values of the demonstration of the physical consequences of XOS--eXtreme cocktail Over-Shaking--which is most relevant to us at our advanced ages. Thanks again, Anders, for your inspiration and knowledge-sharing. If there is anything that twerks us ATM, it is the dominance of non-sensical favored liqueurs--come on, root beer is NOT a proper profile for a liqueur. These foolish flavors crowd out store shelf-space for the tried and true traditional mixers. Case in point, there are MANY interesting and flavorful cocktails made with Sloe Gin. Try finding a reliable local vendor of Sloe near you!? You'll see shelves of these weird non-sensical mixers and rarely find a decent Sloe Gin. (We are seniors on a budget, so we routinely special order Hofland brand for mixing over the pricier premium brands like Plymouth.) Could you PLEASE consider doing an episode featuring the variety and pleasures of Sloe Gin cocktails? Once a classic beverage goes extinct, it is extremely hard to bring it Jurassic-Park-like back from the Beyond. Thank you and and keep up the great work you do helping us all get through another day of the Crazy, Jim & Timlynn from Broomfield Colorado, looking forward to Chill-time :-) :-)

I had an AMAZING cocktail at Cobble Social House in Minneapolis, and when I got home to IL I tried to recreate it. The ingredients were Pineapple Rum (I think they used Plantation), Smith & Cross, Cynar, Ancho Reyes, Cinnamon and Lime. I thought I nailed the proportions but it still tasted wrong. I was shaking it because it had lime. Then I stirred it... That was it! It tasted so different. It was definitely stirred. (Also, sooooo good btw if you're ever in the Twin Cities!)

@TrueVanguard3 жыл бұрын
You noted not shaking your gin cocktails, but rather to stir them to maintain those botanicals. I've always been shaking my Last Words, am I doing that wrong? It has citrus, so I've always shaken it. Which rule negates the other? Is it more important to stir the gin or more important to shake the citrus?
@brendancurtin6793 жыл бұрын
He didn’t say no to shake gin drinks. He was saying that the “bruising” thing people say is about gin (and why those people say you shouldn’t shake a gin martini). Shaking can cause subtle flavors to be lost, which you generally want to avoid with spirit-forward drinks. But citrus is probably already masking subtle flavors anyway, so shake away. Coincidentally, Anders doesn’t shake his aviation cocktails, even though they have lemon juice.
@Yong_Goh3 жыл бұрын
The reason why the last word is typically shaken, is the incorporate and aerate the fruit juice component with the liquers. It gives the drink a more chewy texture which is typically favourable with juice cocktails

He did specifically say that it’s for drinks where gin is the predominant ingredient. It’s 1/4th of a Last Word, in your example. But I think, more to your question, that shaking a citrus cocktail supersedes stirring a gin cocktail. I can’t think of any cocktails where gin is that predominant, especially with citrus involved.

The technique I use for stirring two drinks at the same time is to use two bar spoons that are the same height and have either the red tip or a teardrop tip (no trident/muddler/shape/decor). Place your mixing glasses right beside each other. In one hand hold both spoons upside down and stir like that

I feel like mine are all over the place and I can't seem to get a good technique. Thanks and keep up the great work!
@AndersErickson3 жыл бұрын
This is a really good question - and dashing can be tricky. Depending on the size of the bottle or how much is in the bottle can determine how much of a dash you get. Using a smaller dasher bottle will give you smaller dashes, but help with consistency. With those, dashing straight down will give you the best dash. Thanks for the question - now I'm going to try some new dasher bottles! Cheers!

In the vein of making multiple drinks, any downside to making "batches" of certain drinks? For example, making 2 or more old fashioneds at once, then separating into individual glasses? Any drinks this works better with than others?
@lxxwj3 жыл бұрын
im neither a bartender nor a physicist, so take this with a grain of salt, but i would think the dilution/chill would be thrown off by doing that. maybe less so with shaking, but ive noticed stirred drinks are really finnicky when it comes to under/overdiluting. i would think adding 2 drinks to a shaker or mixing glass would end up giving you more dilution than youd want, because there would be more room temp liquid, so more ice would have to melt in order to chill it down. alternatively, you might shake/stir for the regular time and have it not be cold enough. for stuff like shaken shots though, theyre only like 1.5oz each so doing a few at a time is probably fine.
@MyDaytonaProductions3 жыл бұрын
@@lxxwj makes sense, thanks for the input! There's probably a reason you never see seasoned bartenders do this, and this may be why.
@brendancurtin6793 жыл бұрын
Nope, no problem with that. I often make two drinks at once (one for me and one for the wife). Sometimes if the drink is a little bit of work and I know I’ll want a second, I make the second at the same time. I serve myself the first drink and I put the second one in the freezer to keep cold. If it requires seltzer, I don’t add that to the second drink until after taking it out of the freezer.
@ianbaker45363 жыл бұрын
My restaurant has a margarita flight and it is easily the worst thing on the menu. The preservation of it involves keeping it cold, which locks most of the flavors in the drink. (not to mention the amount of sugar and water present in the recipe) If you're making a big batch for a party, you should be fine. But if you're trying to keep it for multiple days, it just won't taste as good as making it fresh.

Hey thank you so much for these tips and refreshers. Just got back to bartending after 5 years, for extra income, and I needed some confidence! Love your teaching and what a great team you and your lady make, love it!

I have been a bartender for over 10 years and first of all well done for explaining everything in good detail. The majority of cocktail videos I find are super amateur and not very practical. Also made me laugh with the patting head rubbing stomach thing, I get that all the time.

I'm not a bartender or had any interest in bartending but, bro you are awesome talking and explaining things that I sub and have the bell on, great content.

This was so wildly helpful!! You gave excellent examples and explanations behind each method. Plus, seeing an experienced bartender juxtaposed with someone who is learning and new to these techniques was a neat touch. Thank you!
