Well, 90 percent of the meal to be vibe and atmosphere is a suspicious number. But those meals look light, cool and just invitingly fine. Great video, as is the gold standard of this channel.

I don't agree with that either, hehe. For me, at least 70% is the food, but a great vibe on top of that can make it a place you want to return to more often.

Is there a recipe or maybe advice how to do the fries (at 3:55)? I'm not really the fries fan, but these look like the ultimate ones for me. 😃 I have no clue how to do the layering thing.

I can't give you the recipe, but basically, they sliced potatoes, stacked them in a form, steamed them so they stuck together, cut into sticks, and deep-fried them. If there are any other tricks, you need to check with the chef. He is tagged in all my photos from this place on Instagram. instagram.com/andershusa/

"Bolinhos", hahahaha. He probably told you this, but that's portuguese for "little cakes"/"little croquetes" (depending on the context). Is the inspiration Portuguese or Brazilian? Probably the former, we don't use too much aioli, and I've never seen "bravas" sauce in my life.

Bolinhos as in "Bolinhos de bacalhau" which is what this dish essentially is. The sauce is the "salsa brava" which is commonly used on the dish "patatas bravas." What is to be misunderstood?

@@andersandkaitlin oh no! The word has two meanings. It can be used both for things like cupcakes and fritters, that's why I said "depending on the context". For instance, an arancino can be called "bolinho de arroz". I was just surprised by the name of the dish.

Like most people, I clicked the link from your email and watched the video, but somewhere in the middle I started wondering if you had eschewed your usual excellent balance of informative and critical content and produced what looked and felt like an infomercial. I wondered what is so great about their wholesale vegetable supplier that they are mentioned repeatedly. Well, all one has to do is scroll down to see: "Disclaimer: This is paid promotion by Augusta Arnesen." Fact is: most people don't scroll down, nor read the text on youtube. Our fault, not yours. Yet still, I look forward to seeing and reading much content in the future that is not just paid promotion. (And, no, there is not a two-hour line outside every night.)
