I sat on the next table from Simon Rogan at Cliveden House in 2012, and was really eager to see what he ordered. He had just won Great British Menu so was known. Anyway he ordered the least adventurous dish, which I think just shows that top shows sometimes like something simple.

So many of the Michelin star restaurants these days look incredible, but the food is a spectacle more than a meal. This looked spectacular from beginning to end and there wasn’t a dish that I didn’t want to try. You can tell they really appreciate their ingredients. And the staff were so lovely! Can’t wait to go there.

Lovely looking restaurant. Now, of course I cannot comment on the exact flavors of the food that was served since I have not yet been there myself😂But even from a viewer’s perspective, it’s clear to see the chef’s efforts to achieve flavor balance in his dishes. It’s easy to love your farm and serve a lot of herbs and vegetables, but even with the finest of ingredients there is a chance that what appears on the plate can end up tasting too raw on the palate, nicely solved in this case not just by the richness of the egg yolk, but it’s umami qualities given that I believe the description said it was fermented. And so it goes on. Starchy potatoes were balanced by the rich and savory cheese, a rich lamb belly by the honey, and nearly every course featured some sort of herb or leaf that imparted a digestive-like freshness to prevent anything from being overly rich. And as always, correct me if I’m wrong, but the portion sizes seemed purposefully on the smaller side, something that would have helped to prevent the menu from being overly taxing on the stomach. Pair that with the refined presentation, the easy-to-see expression of Simon Rohan’s unique identity and personality on his plates, and of the course the most wonderful ingredients, and you have a very fine restaurant indeed!!!
